Sunday night dinners mean easy roasts. It doesn’t get much easier than a leg of lamb roast . A little oil, seasoning of salt and pepper and this lamb has a crispy, delicious, juicy skin. An hour and a half roasting time on the Summit Charcoal and it’s done. Time to make the gravy!

Easter is just around the corner! Remember to grill your seafood hot & fast over charcoal like I am in this video! The flavour is incredible! Whole Snapper, crabs and prawns are some of my faves on the grill! Cavity stuffed with sliced lemon and fresh dill. Watch the video until the end and see how I’m brushing the fish with a touch olive oil and freshly squeezed lemon juice. ______________ Grilled using @firebrandbbq lump and briquette Charcoal... in my Weber Kettle. When I have this much seafood on my grill, I place a chimney of lit charcoal on one half of my Weber and rotate my seafood directly over the heat. It’s important to work fast with seafood. If you’re new to grilling fish, check internal temp with a thermometer during your cook and at 130f (55c) fish is ready to eat! Whole prawns take around 4 mins a side to cook, whilst these Blue Swimmer crab portions took around 8 mins a side to cook. _______________ Have a great day/night everyone. Pecan Smoked Beef Cheeks . I love that cooking tough, almost inedible cuts of meat over low and slow heat for hours can completely transform the meat. I cooked these Robbins Island Wagyu beef cheeks on the Summit Charcoal for 4 hours at 120C with pecan wood. A simple coating of salt and pepper, no spritzing or boating. So sweet, savory, sticky and delicious!!
