Beef and broccoli like you’ve never had it! * ⠀⠀⠀⠀⠀⠀⠀⠀⠀
* INGREDIENTS
* For the broccoli rice
* 4 cups broccoli florets about 2 small crowns
* 1 tablespoon olive oil
* 1 garlic clove, minced
* 1 green onion thinly sliced, white and green parts separated
* For the Sauce
* ¼ cup hoisin sauce
* ¼ cup water
* 1 tablespoons cornstarch
* 1 tablespoon soy sauce
* 1 tablespoon toasted sesame seed oil
* 1 teaspoon fresh ginger, minced
* For the beef
* 1 tablespoon olive oil
* 1 pound flank steak, thinly sliced across the grain
* Salt and pepper, to taste
* INSTRUCTIONS
* 1. To make the riced broccoli, process the broccoli florets in a blender or food processor until you get a riced texture. Heat a pan with olive oil on medium, add the garlic and the white parts of the green onions and fry until fragrant, about 1-2 minutes. Add the riced broccoli to the mixture and toss together until the broccoli slightly softens, about 2-4 minutes. Divide the broccoli between 4 bowls and wipe clean the pan with a paper towel
* 2. To make the sauce, whisk together the ingredients in a small bowl or a small blender. Set aside.
* 3. To cook the steak, season with salt and pepper. Then heat the pan used for broccoli rice with olive oil on medium-high. Place the steak strips on the pan in a single layer and cook for 1-2 minutes per side to brown each steak strip. You many need to cook in batches. Add the sauce to the steak and reduce the heat to low. Cook for an additional 3-5 minutes, stirring to coat and allowing the sauce to thicken.
* 4. Serve the steak on top of the riced broccoli, and garnish with the green parts of the green onions and red pepper flakes. —————————————————

Happy Wednesday! You guys messaged asking where to find this recipe after my friend @zestmylemon made my hearty half and half bowl of GREEK ZOODLE PASTA SALAD loaded with tomatoes, olives, red pepper, feta and cucumbers! grab the delicious deets below #vegetarianfood #pastalove .
1 cup of cooked, gluten-free rotini (I recommend brown rice, quinoa or chickpea pasta for a little protein)
1 cup of zucchini noodles (you can buy the pre-spiralized ones & save time )
a handful each of tomatoes, red peppers, black olives, cucumber, and goat’s milk feta
Instructions sauté the zucchini noodles in garlic ghee or olive oil and a pinch of pink sea salt for about 3 mins (until softened slightly)
Mix with the cooked, but cooled down pasta, toss in the rest of the ingredients, add my go-to Vinaigrette

3-4 tbsp of extra virgin olive oil
2 tbsp of fresh lemon juice
2 tbsp red wine vinegar
1-2 crushed garlic cloves
1/2 tsp dijon mustard
sea salt, oregano, fresh black pepper &
sumac to taste. about 1 tsp each of sumac and oregano. Which everything together, pour right before serving.

Spicy steamed dumplings, anyone⠀
⠀
Recipe⠀
Ingredients: (similar to my fried wonton recipe but without walnuts):⠀
~ 2 lbs of bok choy, washed and julienned⠀
~ 1 package of wonton/dumpling wrapper⠀
~ 1 box of firm tofu, drained & mashed⠀
~ 1/4 cup of saute mushrooms⠀
~ 1 tablespoon black bean sauce⠀
~ 1 tablespoon corn starch⠀
~ salt to taste⠀
~ oil⠀
Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):⠀
~ 3 tablespoons soy sauce⠀
~ 2 tablespoon chili oil with chili crumbs⠀
~ 1 tablespoon sesame oil⠀
~ 1 teaspoon Chinese black vinegar⠀
~ 1 teaspoon grated ginger⠀
~ 1 teaspoon sugar⠀
⠀
Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.⠀

Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, starch, combine well & season if needed.⠀
⠀
Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.
