Back to one of my favorite restaurants and had a splendid dinner with the family last night. Lovely time accompanied with exquisite dishes that were all finely-cooked and beautifully-plated by Chef Felix Sienatra, owner of this amazing restaurant “The Wind Chime”. #blessed — The highlight of the dinner for me goes to their SANTA MARIA STEAK (Wagyu AA 9+ Tri Tip, 200gr): fantastic doneness with the amazing hint of crust on the outside — tender and succulent with thin slices; what you just expect from a fine bottom sirloin cut. Simply marinated and rubbed to a nice, savory flavor. It was actually was bigger than how the photo may justify its look. The meat was freshly-imported as well. — We also had some amazing starters: the Seared Hokkaido Scallop was great — though it was slightly overcooked for my personal preference, however it matched really well with the pernod cream sauce! My favorite goes to their Foie Gras: beautiful presentation with perfect searing; a flavorful balance between the portobello and apple — always down for sweet-savory combination. — The sole character of this restaurant lies on the proper use of micro greens: locally-grown with proper use, not just creating exquisite presentation, yet also purposeful.
