Hydrogen fluoride (HF) is a compound essential to society, yet so dangerous it is feared even by many trained chemists. The anhydrous form is a colorless, easily liquefied gas (bp 19.5 °C). When the gas dissolves in water, hydrofluoric acid is formed (~48% solution is a common reagent). HF corrodes through almost every material, including glass and bones, due to the strong bonds fluorine forms with other atoms. Skin contact with HF causes severe burns that may not be initially painful due to nerve interference. If treatment is delayed, fluoride absorbed into the blood sequesters calcium and magnesium ions, which leads to excruciating pain and cardiac arrest. HF vapors cause blindness and pulmonary edema. In spite of all this, HF is safely handled in many industrial processes. Sulfuric acid is used to extract HF from the abundant mineral fluorite (CaF2); in this manner, HF is the precursor to all fluorine compounds. Examples include PTFE (Teflon, a robust polymer with hundreds of uses), cryolite (Na3AlF6, central to aluminum production), and fluoride salts (for cavity prevention). In the petrochemical industry, HF is a catalyst for upgrading crude oil fractions into alkylate (gasoline stock) and linear alkylbenzene (basis of all modern detergent). ⚠️ Saviez-vous que les poêles et casseroles antiadhésives présentent une risque pour la santé ? Lorsqu'il est chauffé, leur revêtement peut libérer certains de ses composants, qui peuvent ainsi migrer vers votre aliment. Préférez donc toujours les poêles et casseroles en inox ou en fonte, car il s'agit de deux des matériaux les plus inertes qui existent aujourd'hui. Personnellement j'utilise presque exclusivement des poêles et casseroles en inox depuis des années. Elles sont saines, légères (plus pratiques que la fonte) et ultra résistantes (elles durent littéralement 10 ans minimum) ! Certes les poêles en inox accrochent plus que les poêles antiadhésives. Mais il existe des astuces pour réduire cela, comme ajouter un peu d'huile ou ne pas retourner trop tôt l'aliment (il grillera et se détachera tout seul). Ce petit inconvénient vaut largement le coup, en comparaison des risques significatifs évités pour sa santé. Saviez-vous également qu'il ne faut jamais utiliser des éponges grattoirs, des spatules autre qu'en bois ou des couteaux dans les plats, poêles et casseroles au revêtement antiadhésif ? Cela crée des rayures par lesquelles les composants du revêtement migreront encore plus facilement. ❔ Et les poêles en céramique ?
