The Bee’s Knees is a classic Prohibition cocktail. Even the name evokes the era.
Here’s my take on this timeless cocktail. ——————————————————————————— * 2 oz St. George Spirits Terroir Gin . * 3/4 oz Myer Lemon Juice . * 3/4 oz homemade honey sage simple syrup . * St. George Absinthe Wash . * Few drops of Butterfly Pea Extract. * Splash of Lavender Dry Soda. * Granulated honey rim and Sage blossom garnish @herbsbydiane

Tart Pineapple Punch
2 ounces Beefeater Gin
¾ ounce lime juice
¾ ounce tart cherry syrup
4-5 medium size slices of pineapple (3/4 to 1 ounce juice)
Method:
Combine all ingredients in a cocktail shaker with ice. Shake hard to chill and combine ingredients. Strain into a carved out pineapple (or cocktail glass) over crushed ice .

Rinse you glass with Absinthe/Stir ingredients with a lemon zest and plenty of ice/Strain into a glass over a large rock of ice/Garnish with dehydrated lime wheel. Cheers

YOUR KNUCKLES SAY COBRA

1 big handful of watermelon
3 sprigs of mint
2 oz Seedlip Spice @seedlipdrinks
1/4 oz vanilla syrup
1 barspoon pimento dram @thebittertruthcompany
1/2 oz fresh lime juice
1 dash hellfire bitters @bittermens
Top with soda water
.
Muddle the watermelon, add the mint and gently muddle some more. Add the other ingredients except soda, shake with ice and strain into ice-filled glass. Top with soda water. Garnish with more mint and watermelon. . -

This springtime creation from @cocktail_vision took its inspiration from a classic Bee’s Knees, but wends its way through gardens, meadows, and orchards to a modern and original outcome. The recipe starts with a St. George Absinthe Verte wash, followed by 2oz of our Terroir Gin, 3/4oz Meyer lemon juice, 3/4oz homemade honey sage simple syrup, a splash of Lavender @drysoda, a few drops of butterfly pea extract, a granulated honey rim, and a sage blossom garnish from @herbsbydiane.
