So happy with how this Sweet Potato Almond Butter w Probiotics & Flax Curry turned out! To make this here is what you need:

2 Large Sweet potatoes, cut into half moons • 1/4 cup rice medley •
.
For the curry: 1 packet of @naturallymore Almond Butter w Probiotics & Flax (PEANUT22 for 22% off) • 1 can Whole Tomatoes • 1/3 unsweetened almond milk * or coconut milk but I used almond.
• 1 Tablespoon of each : Turmeric, Garam masala, powdered ginger, minced onion • 1/2 tsp salt and 1/2 tap of pepper • .

HERE ARE THE STEPS!
Roast the sweet potato with olive oil salt and pepper at 425 degrees for 25 minutes. Set aside. Cool the rice according to package directions and set aside.

Process all of the curry ingredients together. It will not be smooth.

Place the rice on the bottom , then layer with sweet potatoes and add curry on top
.
This is a carb dense and fat dense meal so be mindful of your portions and add your preferred source of protein. I would add chicken or fish! You might do tempeh to make it a vegan dish, that’s cool YOU DO YOU!
