Super Simple / , best as side dish for Rice & Sambar, Rasam, Curd or any Variety Rice. Learnt this from Priya Aunty, my childhood friend and beloved neighbor. The age gap didn't matter as much : 1 cup diced Potatoes, cut them into small squares. 2-3 tsp Oil 1/4 tsp Mustard Seeds 1/4 tsp Cumin Seeds Generous pinch of Asafoetida 1/8 tsp Turmeric Powder 1 tsp Sambar Powder Fresh Curry Leaves Salt as needed ℍ : In a cast iron pan(I stress this enough to get even roasted and golden brown potatoes), heat oil. Add mustard, cumin seeds. As they splutter, add asafoetida and curry leaves. Add diced potatoes and turmeric powder. Fry for a minute and then add salt as needed along with sambar powder. Mix well. Now slowly roast the potatoes on lowest flame, mixing them every 3-4 mins. Too much mixing will break them and make a mash. If they stick to the pan, gently scrap them. As they get cooked, they stop sticking to the pan. And continue roasting until golden and crisp.
