It’s upgrade time!
Some of you will have noticed something different about the design of our bars.
They got a major overhaul at the end of last year as we made the much-needed switch to solid polycarbonate moulds. Prior to that, we were relying on some delicate vacuum formed moulds that never held up for the long term.
The beautiful design stemmed from a gorgeous illustration by the wonderful @ginakielillustration and @injectdesign . You’ll be able to spot slices of the wonderful @wellingtonchocolatefactory story layered into the design.

Sunday tasting
While I am still dreaming about my first trip to Peru, at least I can unleash my imagination with chocolate. I've had a lot of fun lately comparing chocolate bars made with cacaos that grow in the same country but in different regions, areas and even estates.
This is craft chocolate on steroids: neighboring cacao trees that deliver incredibly different tasting notes
The taster is forced to pay close attention and sharpen her/his tasting skills. Also a great way to defeat the myth that the name of the country is enough to guarantee quality, which is never, ever true.
Today I hit two renowned growing regions in Peru, Piura and Ucayali, thanks to these @tribarchocolate bars.
Some things worth noticing:
- the Piura bar is 70% made bean-to-bar with fine cacao from @cacaotales, while the Ucayali bar is 73% made tree-to-bar with fine cacao that comes directly from Tribar's own plantation
- whenever I do this kind of tastings, I am always careful to remember which bar belongs to which packaging. In this case, there is no confusion: the bar from Piura is of a way lighter brown color than the one from Ucayali. The difference in color has probably more to do with the bean variety than the slight difference in percentages (only 3%).
Time to taste and compare now
Both offer an incredible mix of exotic fruits, like a refreshing cocktail enjoyed on the beach anywhere in Latin America
More specifically, they taste intensely like passion fruit. But while the Piura is entirely bright, fresh and exotic, the Ucayali has also notes of berries and dried fruits.
Either way, you can't possibly go wrong. But most important, this demonstrates one of the beauties of craft chocolate: tasting exotic fruits inside a dense dark chocolate bar.
