June’s theme for the #homebarawards is ‘Book riffs’. Here’s my submission, a riff on a competition winning alcohol-free recipe by legendary Dutch bartender @tessposthumus - the Golden Sour - in her book ‘Cocktails met Tess’
BRAZILIAN GOLD
2 baby bell peppers / capsicums
2 oz Cachaça @sagatibabrasil
1/4 oz apricot liqueur @distilleriemassenez
1 1/2 oz fresh orange juice
2/3 oz fresh lemon juice
2/3 oz chilli sugar syrup
1 dash orange bitters
Egg white
Cut the bell peppers into small pieces and muddle. Add the other ingredients and dry shake. Add ice and shake again, then fine strain into wine glass filled with fresh ice.
Tess is probably the most famous bartender from my home country of the Netherlands and she has once again been nominated for International Bartender of the Year for the fourth year in a row! I’ve made Tess’ Golden Sour before and it is a delicious alcohol free drink that really lets the bell pepper flavours shine without overpowering the drink.
I decided to take the chilli and bell peppers in the original flavours and riff on them by combining with Brazilian cachaça and pairing them with just a hint of apricot. It added a little bit of South American charm to the drink, and the apricot is a wonderful accent to the peppers. Deliciosa Cheers to you Tess, and I’m looking forward to visit again this Christmas!
