1/2 a head of cabbage, sliced
1 small onion, sliced
1 medium carrot, julienned
1 red pepper, sliced finely
1 yellow pepper sliced finely
3 garlic cloves, chopped
3 sprigs of thyme
1 tsp of all purpose seasoning (see post for recipe)
1 tbsp of dairy free butter
1 tsp of black pepper
1/4 cup of water
Himalayan pink salt to taste
1/2 scotch bonnet, minced (or use 1/4 tsp of chilli powder)
2 tbsp of coconut oil

Melt the coconut oil on medium heat then proceed to saute the onion, garlic along with the sprigs of thyme until soft and tender.
Add the cabbage, carrot, bell peppers and scotch bonnet, fold and stir. The pan may seem overcrowded but the cabbage will reduce as it heats through.
Continue to stir and fold until the cabbage reduces in volume, this should take up to 5 minutes.
Once reduced, lower the heat and add the water, ready for steaming.
Cover the skillet with a lid and steam for 15 minutes (10 minutes or less if you want crunchy cabbage).
Remove the lid and season with the all purpose seasoning, black pepper, butter and salt to taste and stir.
Serve accordingly.

I didn’t become a diehard eggplant fan until I tried miso grilled Japanese eggplants at a restaurant one time. And since then I was sold and only wanted eggplant cooked that way. This is the closest I’ve ever come to that flavor, and oh man...I don’t think I could have eaten that fast enough. Tender, slightly sweet with savory notes of miso. Pretty magical along with some pan sautéed broccoli, cabbage, edamame, brown rice and avocado.

1 small eggplant, cap removed and cut directly in half lengthwise
2 tsp @soomfoods tahini for oil free or 1 tbsp olive oil (I used tahini)
1 tbsp soy sauce
1 tsp miso paste
2 tbsp rice wine vinegar
2 tsp sugar of choice (I used coconut sugar)

Set oven to 400F Fill a medium bowl or dish with salted water and submerge both eggplant pieces under water for about 10 minutes. Remove eggplant and score it as desired. Take the tahini or oil and rub evenly over the eggplant. Place eggplant in the oven score side up for at least 10 minutes. While eggplant bakes, whisk together remaining ingredients. Set mixture aside until eggplant is done roasting. Pull eggplant out and top with sauce mixture. Take eggplant and place in the oven again for another 10 minutes or place in air frier at 370F for 8-9 minutes. Remove eggplant gently and serve as desired.

I have to tell you something fascinating I learned while writing this article! Before this article, I treated all those green worms in my garden the same. Well, I still treat them the same, but I actually learned how to accurately identify TWO kinds that reside in my garden.

One is the larvae of the cabbage white butterfly (swipe), but the other is far more prevalent in my garden---the cabbage looper. There is a picture in my article of a looper larvae, but essentially they move like inchworms because they only have legs in the front and back....so they have to bend in the middle to move. Cool, right?!
