A ⭐️⭐️⭐️ star restaurant that serves a procession of just a simple piece of fish on a plate. No extraneous garnishes, geometric designs, sauce dots/squiggles/smears. Chef Ramirez is a genius....his sauces are paradoxically rich yet not the least bit heavy, each one has distinct acidity that balances the richness. So many of those other French tire company places serve one rich fatty luxurious course after another that quickly leads to palate fatigue and leaves you feeling bloated and ready to explode by the end of the meal.
