Scallop Skewers with Crispy Bacon and Chilli Jam! . Quick and easy skewers that can go on the BBQ or under the grill (in this case, the grill... unfortunately those dark clouds came over). These are really more vegetable than scallop because when I opened the pack, there were only five in there . Still they were nice and plump and it meant I could get rid of another courgette, albeit a small one . The chilli jam (from @stokes_sauces ) is delicious... I just added a little olive oil to give it more of a dipping sauce consistency - for this particular dish. To eat, you just need to ease everything off the skewers, then onto a small fork then into the dip! To make (for 2) . Start with four rashers of streaky bacon (each one cut in two) under the grill for a few minutes, until they’re crispy on both sides. Set aside . Then prep your skewers... I made two each and one to fight over - with 10 cherry tomatoes, five yellow tomatoes, 10 slices of a small-sized courgette and five largish plump scallops. Assemble with the scallops in the middle and brush all over with olive oil . Finally pop them under the grill with a sprinkle of chilli flakes and some freshly ground black pepper and grill until the scallops have cooked through and the veggies are just charring a little (only takes 5 mins or so each side). CHILLI JAM done Such a great way to use up excess chillies and so easy‍ Recipe⬇️ . . . 600g chilli 500g red capsicum 1kg sugar 1litre white wine vinegar 2tblsp salt Blend chilli and capsicum in food processor to desired texture. Put vinegar and sugar in a large saucepan and simmer for 20mins or until sugar has dissolved. Add the salt, chillies and capsicum and simmer for 1hour or until it makes the test set. Pour into sterilised jars.. Ruby red tomatoes and fresh sweet chilli peppers made into this gorgeous sweet and spicy, jammy consistency which is my mum’s signature chutney. This Tomato and Chilli Chutney or Jam has been a mainstay in my house and was made in humongous batches in the winters when beautiful tomatoes were in season. Jars of chutney were stored and some handed out to friends and relatives and then they were eaten ... with parathas, with pakoras and sometimes just on its own! This does have a jam like consistency so I mostly refer to it as Mum’s Tomato and Chilli Jam . Tomatoes and sweet chilli peppers are blanched and then the tomato skins are removed. Everything is then blitzed together to make a paste and then pop them in a pan and put it on the stove. Add sugar, apple cider vinegar, salt and a freshly toasted red chilli powder (based on your spice tolerance) and let it simmer on low heat till you achieve the jammy consistency. Once it’s done add a sprinkling of the Bengali Bhaja Masala (translated to toasted masala).
