Toasted Ravioli. You want in on this. Recipe below. Step-by-step in Story.
Grab your favorite of our 12 raviolis, and make an absurdly good, unique appetizer! Great for munching during #MarchMadness!
Ingredients
> 1 bag fresh P&P ravioli (keep in fridge until ready)
> 2 eggs
> 1/4 cup buttermilk
> 2 cups breadcrumbs
> Oil for frying (about 4 cups, enough to create a few inches of depth; here, we used about half canola and half olive pomace oil)
> P&P marinara for dipping
> Grated parmesan and finely chopped parsley for garnish
Recipe:
1) Beat eggs and combine with buttermilk in bowl. Put breadcrumbs in a second bowl.
2) Dredge a ravioli in egg mixture, allowing excess to drip off. Then coat ravioli in breadcrumbs. Repeat.
3) In small saucepan, warm marinara on low heat.
4) In frying vessel, heat oil to 350 degrees F.
5) Put ravioli in oil and fry for about 2-3 minutes or until golden (temperature will drop when ravioli added). Add individually (but quickly) to avoid issues with sticking. You might need to fry in two batches.
6) Remove ravioli and place on paper towel to dry and cool.
7) Plate, add garnish, ENJOY! And share. Maybe.
IF YOU WANT to bake the ravioli, you can spray oil on a baking sheet, place ravioli on the sheet, and then generously spray oil on top of the ravioli. Bake at 375 for 15-20 minutes. They will come out drier and can puff up more, but they still have a solid crunch.

Thanks for being here and sticking around. It’s not every day I change my blog name and finally start posting again, glad you’re here for it BC consistency is HARD y’all.
Life is ever so busy and constantly changing for me these days, and some days it’s hard to keep up and still be the best me I can be. How do y’all do it? What are your tips to consistency? BC I have full intentions of working on it.
Hopefully practice makes perfect, because I have exciting and refreshing trips planned this spring and summer that I want to share with you. These places I’ll be are dear to my heart. Intentional would be a word I’d use to describe my thoughts behind sharing these experiences. Cheers to sharing our journeys, being vulnerable and making the world feel smaller and smaller. ♥️

1. I'm a coffee fanatic. I think my love for coffee grew exponentially when I lived in Portland because they have a genuine love for coffee shops (and donuts, and cocktails, and beer, and hiking, and a slower paced life). I just love it there. But now, Charlotte's coffee shop scene is growing like whoa and I'm here for it. My favorite is still an iced lavendar vanilla latte from @defined.coffee ⠀

2. I've run two full marathons and 10 half marathons. I currently have a tentative full on the schedule for this fall (TBD) and I'm signed up for the @rundisney marathon next January. Anyone joining me for that?⠀

3. I don't care what you eat. Yep, I mean that. My clients come to me worried about what they've been eating and I just tell them that their food choices aren't my main concern. I'm more interested in why you ate what you did and how you felt about it. Let's chat!⠀

4. In 2002, I carried the Olympic Torch briefly as part of the 2002 Winter Olympics Torch Relay. The relay was a 65 day run, where different people carried the torch through different cities throughout the US leading to Salt Lake. I carried it down a street in Providence with my dad. It was pretty cool. ⠀

5. I have such fond memories of summer nights growing up, eating out on the deck with my family (it was tough to get all 6 of us together), eating burgers and silverqueen corn from our local farmstand and listening to @jamestaylor_com playing in the background. Summer nights are my favorite.⠀
