Ingredienti per 4 cocottine: 330gr panna fresca, 1 bacca di vaniglia, 80gr tuorli, 70gr zucchero, 1pzc sale
➡️portare a bollore la panna con la bacca di vaniglia e lasciare in infusione per 5 minuti. A parte sbattere leggermente i tuorli con lo zucchero e il pizzico di sale. Quindi versare a filo la panna e mescolare. Trasferire la crema nelle cocottine ci ceramica preparate in una pirofila contenente acqua bollente per la cottura a bagno Maria. Coprire le coppette con carta stagnola e cuocere in forno ventilato a 140C per 45min. Quindi sfornare e lasciar raffreddare. Poco prima di servire cospargere la superficie di zucchero di canna e caramellizzare con il cannello .

Didn’t order another juicy foie gras - SO MANY REGRETS Loved the emphasis on quality ingredients here which are prepared with much thought and care. The range of flavours that can be achieved by such a combination was reflected in my starters, as I moved from the summery scallops with peas to the more intense lobster bisque and earthy escargots. A meat feast ensued, with a slow-cooked lamb rump cooked pink to allow the natural juices shine. The foie gras addition to the steak is a MUST ORDER - it practically dissolves in the mouth as it releases its fatty, aromatic oils ❤️ Desserts were all also excellent, with a molten chocolate fondant always being a good choice. I see why business people and shoppers alike retreat here for some good comfort food!
