Hopped on a longboat out of Khao Lak, Thailand. The Mahi Mahi and Barra didn't show any interest to the poppers and skirts presented. I therefore baited one of my #greysfishing flapper paternoster rigs with squid heads hoping for some bottom action. After a duo of baby groupers, I dropped the rig over the other side of the longboat, let the lead hit bottom and started jigging away. Before long, I received a greedy take. I set the hook and the rod tip lurched over the boats edge. For the first time that day, my drag kicked into gear. The attached bottom dweller soon ran out of steam and I was pleasantly surprised to see a Pacific White Snapper on the middle hooklength. It looked ideal for the pan, so took it back to the head chef at our resort who prepared it deep fried with garlic and pepper. Taste was out of this world.

What better than a buttery melt in your mouth piece of fish at the end of the day? Lol well I could think of lotsa other things but this is definitely one to enjoy and try. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1kg fillet hake portioned ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 lemon zest and juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2tsp coriander seeds crushed lightly ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1tsp paprika powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp fish spice ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 cloves garlic grated ⠀⠀⠀⠀⠀⠀⠀⠀⠀
70g butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Seasoning. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Massage all the ingredients into your fish besides the butter. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Using some butter coat a baking tray that has a lip or a casserole dish generously. Cut the remaining butter into blocks/cubes ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place fish on the tray or in the dish, and top with small cubes of butter. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your oven on 180 and bake for 25’minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with vegetables or mash potatoes. Well anything made with potato will be a great side to this dish. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

P.S when you zest your lemon, make sure you only remove the yellow parts of the skin and not the white. Procedimento
1️⃣ Per il fondo: fare un brodo con gli scarti della spigola insieme a pomodori, aglio, scalogno, sedano e carota, rosolare, aggiungere acqua a coprire, cuocere per circa 2 ore a fuoco basso, filtrare e ridurre.
2️⃣ Per la spigola: cuocere sottovuoto, rigenerare in padella a fuoco alto dalla parte della pelle.
3️⃣ Per il cipollotto e la patata: sbianchire in acqua bollente salata e ripassare in padella a fiamma alta fino a dorare.
