I do think it's still a little early for pumpkin things, but I wouldn't say no to these baked maple glazed pumpkin donuts if they appeared I made these last year on the blog and am linking temporarily to them in my bio if you want the super simple recipe!

Baked vanilla donuts with raw blueberry icing . While lilac season may be a solid 6 months from now, if you’re on the opposite side of the globe these are right on point! Besides, a donut topped with autumn leaves doesn’t have quite the same ring to it... 1 1/2 cups (190g) plain flour. 1/2 tsp fine salt. 1 tsp (5mL) baking powder. 1/2 cup almond milk. 2 tsp apple cider vinegar (ACV). 1 tsp vanilla extract. 1/2 tsp ground turmeric. 1/3 cup coconut sugar. 2 Tbsp olive oil. 3 Tbsp Aquafaba. Method. 1. Preheat oven to 180 degrees C, and set aside a donut pan. 2. Which auqafaba for a few minutes until light and fluffy, set aside. 3. In a large mixing bowl, add ACV and milk. Set aside to thicken for a couple of minutes, then add remaining wet ingredients (vanilla, oil, sugar). Mix to combine. 4. Sift dry ingredients (flour, baking powder, salt, cinnamon and turmeric) into the bowl and mix together. Finally, fold through Aquafaba, then spoon mixture into the donut holes (to 3/4 full). Smooth down with a wet finger. 5. Bake 9-12 mins, then allow to cool for 10 mins before inverting onto a wire rack to cool. To make the icing, blend; 1 cup macadamias, 1 Tbsp lemon juice, 1/3 cup blueberries, 2 Tbsp pure maple syrup and 2 Tbsp coconut oil. Blend until VERY smooth, then dip cold donuts in. Enjoy! Xx

So after countless attempts at trying to make a healthy vegan donut with chickpeas, and failing... I finally made some not as healthy (honestly still pretty darn healthy though) vegan donuts that turned out delicious!! I guess this was just the world trying to tell me that donuts are not supposed to be super healthy even though they might not be up to perfect health standards... they are still 100% vegan, refined sugar free and oil free! I’m also not a big fan of icing so I didn’t ice these, but feel free to do so if you make them!(I thought they were amazing with just a spread of peanut butter on top) ⒸⒽⓊⓃⒸⓀⓎ ⓂⓄⓃⓀⒺⓎ ⒷⒶⓃⒶⓃⒶ ⒷⓇⒺⒶⒹ ⒹⓄⓃⓊⓉⓈ INGREDIENTS... -1 medium banana -1/4 cup peanut butter -2 tbsp agave -1 tsp stevia -3/4 cup almond milk -1 flax egg(1.5 tbsp ground flax w/ 2.5 tbsp water) -tbsp vanilla extract -1 cup all purpose flour -1 tsp baking soda -1/4 tsp salt -1 tsp cinnamon -1/2 cup enjoy life chocolate chips -1/4 cup chopped walnuts METHOD... -preheat oven to 350 degrees. -In a medium bowl mash banana, add in peanut butter, agave, stevia, and almond milk. -sift together flour, baking soda, salt, and cinnamon, add to the same bowl. -mix together, and add flax egg. -lastly fold in chocolate chips and walnuts. -place batter into a nonstick donut pan. -bake for 25 minutes! -let cool and ENJOY! -makes about 8 donuts...so double recipe if you want more #vegandonuts #vegandessert #unhealthyvegan #veganbaking #veganrecipeshare #veganrecipes #veganbananabread #chunkeymonkey #veganfood #veganteen #veganfoodshare #walnuts #enjoylifechocolatechips #peanutbutter #homemadedonut #bakeddonut #oilfree #refinedsugarfree
