Thanks to the Game of Thrones imperial stout, this crown of lamb is fit for a king ⠀ Notes: Stout makes the perfect pairing and ingredient for this decadent, garlicky and herbaceous lamb. We used an imperial stout, but any kind of stout would be delicious! ⠀ INGREDIENTS 1 crown roast of lamb (2 racks of 6-8 ribs each, tied into a crown) 1 tbsp olive oil 4-5 cloves of garlic, finely chopped 4 tsp fresh rosemary, chopped 2 tsp fresh thyme, chopped 1 tsp kosher salt ½ tsp freshly ground black pepper ⠀ DIRECTIONS 1. Preheat oven 375° F. Place crown roast on a baking sheet and rub with olive oil. Combine garlic, rosemary, and thyme and rub all over the lamb. Season with salt and pepper. 2. Place on the middle rack of the oven and cook for 30-35 minutes, rotating once. Meat should reach an internal temperature of 130-135° for medium-rare. 3. Transfer lamb to platter, reserving 2 tbsp of pan drippings for the sauce. Let lamb rest for 10-15 minutes. Cut string away, carve and serve, drizzling with sauce. ⠀ Stout Sauce INGREDIENTS 2 tbsp pan drippings 1 clove garlic, finely chopped ¼ cup shallots, finely chopped 1 tsp rosemary ½ cup stout 1 tbsp butter 1 tsp rosemary 1 tbsp honey salt & freshly ground black pepper ⠀ DIRECTIONS Add pan drippings, shallots, and garlic to a pot and bring to a simmer over medium heat. Cook for 3-4 minutes. Add rosemary and stout. Bring to a boil, and lower to a simmer. Stir in honey and cook for 3-4 minutes.
