This coconut chia pudding recipe starts with some chia seeds and unsweetened shredded coconut and then gets mixed together with some light coconut milk, maple syrup, and just a touch of vanilla. THAT’S IT. Pretty simple, right? With coconut milk, your chia pudding is a little bit richer than using almond milk. This creates a chia pudding that is super creamy!

Ingredients
• 4 tbsp chia seeds
• 1 cup coconut milk
• 1 tbsp maple syrup
• 1/2 tsp vanilla
Instructions
1) Whisk all ingredients together. Store in the refrigerator for at least 20 minutes, whisking intermittently.

Ingredients
• 3 frozen bananas
• 1/2 cup frozen wild blueberries
• 1/4 cup coconut milk
• 1/4 tsp vanilla
Instructions
1) Combine all ingredients into a high-speed blender or food processor.
2) Process until smooth and creamy.

Since we were in school we have been so focused on developing and making our IQ high and always feeding it with books and school. But what abouy nurturing and developing our EQ? Chia currant strawberry compote pudding with home made granola.
Granola:
4 medjool dates, pitted. 1/4 cup of rice malt syrup.
2 T of nut butter.
1/4 cup of orange juice.
blend until smooth in a food processor.
in a bowl:
1 T of peanut butter protein powder by @happywayau.
1 T of cinnamon.
1 tsp of vanilla powder.
1/2 cup of dried figs.
1/4 cup of hazelnut chopped.
mix the wet blend with dry and spread on a tray and place in the oven at 350F for 10 minutes.
remove from oven and add hazelnuts and drief figs and bake for another 10 minutes.
Currant strawberry compote:
1/4 cup of rice malt syrup.
3/4 cup of red currants. 1/2 cup of strawberries.
add in a pot and heat and stir until thickened.

add your compote, layer with chia pudding, coconut yogurt and then repeat. Add your toppings and serve.

Chia pudding soak 1/4 chia seeds with 1 cup of plant based milk. Let it sit for at least one hour to preferrably overnight. Stir a few times in the first 10-20 minutes to break apart clumps.⠀⠀⠀⠀⠀⠀⠀⠀⠀
place some yogurt in two bowls. Colour them with natural food powders add 2 T of yogurt to the chia pudding.⠀⠀⠀⠀⠀⠀⠀⠀⠀
start layering, chia pudding, then coloured yogurt, then plain yogurt, then coloured yogurt. Alternatively you can also add coloured food powder to the chia seed pudding.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mixed berry chia smoothie jars
Chia pudding:
1 cup dairy free milk
1/4 cup chia seeds (more chia seeds thicker the consistency)
Splash vanilla extract
Splash maple syrup
Optional: one scoop of @jeuneora Naked collagen powder which is great for your skin and nails (- use code lizzie15 for 15% off)
Mix it all together then split mixture and let chill in fridge for atleast one hour.
Place one half mixture in the bottom of the jar then layer some coconut yogurt on top.
For the second half of mixture, mix it with either 1/4 cup mashed frozen blueberries, blueberry jam, blueberry yogurt or table spoon açai powder and or purple superfood powder.
Then layer chia pudding on top yogurt.
Smoothie:
1/2 cup frozen mixed berries
1/2 cup pineapple
One banana
1/4 of a lemon
Splash almond milk
Pour on top of chia pudding and top with more fruit.
Homemade Mango Chia Seeds pudding.
This sweet, Tangy, light and refreshing dessert is perfect for Summers! It is sweetened with Honey and therefore no added sugar too. A must try one in this Mango season.
P. S. Tried Chia seeds for the first time. They had a bit of nutty taste with a slight crunch. Plus they are healthy.
