Marble Cake by @livinlaveganlife Recipe:⠀ Ingredients:⠀ Vanilla Batter⠀ 2 1/2 cups flour⠀ 4 1/2 tbs corn starch⠀ 1/2 tsp baking soda⠀ 1 tbs baking powder⠀ 1 cup sugar⠀ 1/4 tsp cloves⠀ 1/4 tsp salt⠀ 1 1/2 cups non-dairy milk⠀ 1 tsp pure vanilla extract⠀ 1/3 cup vegetable oil⠀ 2 tbs apple cider vinegar⠀ ⠀ Chocolate Batter:⠀ 3 tbs cocoa powder⠀ 4 tbs non-dairy milk⠀ ⠀ Instructions:⠀ Pre-heat the oven to 350 F.⠀ In a mixing bowl, add all the dry ingredients for the vanilla batter and mix well. ⠀ Add in all the wet ingredients to the mixing bowl for the vanilla batter. Mix until well combined. ⠀ Save half of the vanilla batter to create your chocolate batter. ⠀ In a separate mixing bowl, add half of the saved vanilla batter with the cocoa powder and non-dairy milk. Mix well until smooth. ⠀ In your baking pan, grease it with oil of choice – we used a little coconut oil. ⠀ Start in the middle of the pan by pouring 2 tbs of the vanilla batter followed by 2 tbs of the chocolate batter. Sporadically shake the baking pan to make sure the batter is evenly spread. ⠀ Alternate with both batters to create your swirls and until you run out of batter! ⠀ Bake in the oven for an hour at 350 F degrees or until fully baked.⠀ Let the cake cool down before removing from the pan. Vegan Mocha Cheesecake Bites by @veganhuggs Headover to her page for loads of deliciously healthy recipes! #recipe ➕➕INGREDIENTS Chocolate Almond Crust: 1/2 cup raw almonds 1/2 cup dates, pitted 2 tablespoons raw cacao powder (or unsweetened cocoa powder) A pinch of salt . Cheesecake Base: 1 1/2 cups raw cashews, soaked in water for 4 hours or more 1/3 cup coconut oil, liquified 1 cup of coconut cream 1/2 cup pure maple syrup 2-3 teaspoons pure vanilla extract 1/4 teaspoon of salt . Additional Ingredients for Mocha Layer: 1 1/2 teaspoons espresso powder 2 tablespoons raw cacao powder . ⏩⏩Instructions Crust: Place all ingredients into a food processor. Process until if forms a loose dough. Press between your fingers to make sure it sticks together. Add more dates or nuts for the needed consistency. Line a muffin pan with standard-size liners. Put about 1 heaping tablespoon of crust at the bottom of each liner. Press firmly down. (*see note) Pop in the freezer while you make the filling . Vanilla Cheesecake Base: Drain & rinse cashews. Discard soaking water. Combine all ingredients (except raw cacao powder & espresso powder) in a blender or food processor. Blend until really creamy and smooth. Place 2 1/2 tablespoons of mixture on top of crust (for 10 cheesecake bites) Pop back in the freezer for about 20 minutes, to firm up the layer a bit. . Mocha Layer: Place the raw cacao powder and espresso powder into the remaining filling. Blend until creamy and smooth. Pour about 2 1/2 tablespoons of filling on top of the vanilla layer. (approximate measurement for 10 cheesecake bites) Freeze for 4-6 hours. Thaw 3-5 minutes before enjoying. Store in airtight container in the freezer. Stewed tomato chickpea curry with rice and avocado by @cookingforpeanuts Recipe: ⠀ Sauté 1 small yellow onion (small dice) until soft and starts to brown, about 5 minutes. Add 2 minced garlic cloves, 1 tsp ground cumin, 1 tsp coriander, 1 tsp sweet paprika, 1/2 tsp red chili flakes. Sauté another 30 seconds before adding 1 tbsp tomato paste. Mix well while heating for another minute. Add 1-15oz can stewed tomatoes. Simmer about 10-15 minutes, adding broth or water if gets too dry. Blend sauce until mostly smooth with a few chunks remaining. Return to stove. Stir in 2 cups cooked chickpeas. Add coconut milk gradually from 1-15oz can until desired creaminess is reached. Ok, pals! Here is an example I posted a while ago. This is not a recommendation about how much you should eat (I am short! ‍♀️), but rather an easy way to show you a visual of what vegan whole foods I eat in a typical day. Breakfast: Ezekiel bread, home made sunflower cheese, Tempeh, arugula, chia and coconut. Lunch: tofu, radish, Brussels sprouts, tomato, arugula, sweet potato and walnuts. Dinner: lentils, kale, radish, sweet potato, olives and sunflower cheese. Snacks: almond butter, apple, olives and chocolate. I use different spices every day. That’s it! I hope this helps. Good night pals! PS: I do strength training 5-6 times a week, and while I am at my ideal weight, I am also working towards gaining muscle weight. ........................ Ya chiquill@s!
