Black trumpet (Craterellus cornucopioides). Choice edible. The most fragrant mushroom I've foraged. Small and camoflagued, it's also the most elusive - and among the most sought after. I was lucky enough to wander across a sizable patch. Their taste is pure umami: rich and layered, the distilled essence of mushrooms in dark red wine. Gourmet chefs prize the stuff, which, like chanterelles, are only available from the wild. I cooked them with eggs when I got back home, chopping the mushrooms until fine, as fine as grated truffles. They gave the dish an indescribable depth of flavor. I dried the rest. Their fragrance lingered on my fingers for the rest of the day. If you live locally and want to try black trumpets, I'd suggest visiting the Mushroom Hub's stand at the Downtown Windsor Farmer's Market (@themushhub). Dennis, the owner, is there every Saturday. His knowledge about black trumpets goes beyond mine. Even if he's sold out, his other exotic edibles are worth buying.

Craterellus fallax — Black Trumpet... Today is the last day of three of celebrating this, my favorite, and most extraordinary mushroom. One of the things I most appreciate about this fungus is its delicate structure, but powerful flavor. A little goes a long way, and too much can ruin an otherwise spectacular dish. This image was taken on the first day I ever found this species. My friend actually found the first one at the end of a three hour fruitless tromp through the waning days of Autumn. We pick 36 lbs of Trumpets that afternoon, and two days later it snowed six inches putting an end to our season.

First attempt at home made raviolis went better than expected. The first, a black trumpet and vegan mozzarella with a basil cream sauce. The second, a hedgehog, vegan herb cheese with a roasted butternut squash sauce. The process was too much fun.
