Ingredients:
2 tablespoons coconut oil
8 scallions, trimmed and thinly sliced
1 large white onion, diced
3 cloves garlic, minced
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/8 to 1/4 teaspoon cayenne pepper, to taste
2 teaspoons sea salt or to taste
1 (28-ounce) can diced tomatoes
6 cups filtered water
1 cup green lentils
1 cup split red lentils*
1 bunch cilantro, stemmed and roughly chopped

Instructions:
Heat the coconut oil in a large stock pot over medium heat-high.
Add the scallions and onion, and cook for 7 minutes, or until softened.
Add the garlic, cumin, coriander, paprika, cayenne pepper, and sea salt, and continue to cook for another 3 minutes, or until beginning to brown and caramelize.
Stir in the diced tomatoes and water, increase the heat to high, and bring to a boil.
Add the lentils, reduce the heat to medium-low, cover, and simmer for 1 hour, stirring every 10 minutes or so to break down the lentils.
Taste and season with more salt and cayenne pepper, if desired.
Turn off the heat and stir in the cilantro.
Serve over warm basmati rice, if desired.

Go-to-dahl from @thehappypear ! this vegan dish has really become one of my new staples. It’s tasty, really easy to make, filling and has a decent amount of protein in it. Only takes about 30 mins to make, so is great for a weeknight. I’d say it also has about 27 of your 5-a-day in it... The recipe comes from their new book Recipes For Happiness which I highly recommend!
Macros per portion: 300cal, 12g protein, 27.3g carbs, 16.7g fat
Ingredients: (makes 3 large portions)
1 tbsp oil
4 scallions (spring onions) chopped
1 thumb sized piece of ginger (grated)
4 garlic cloves
2 chili’s
2 tbsp curry powder
1 tsp cumin
1 can chickpeas (grained)
1 can/pack cooked lentils
Handful fresh spinach
Handful chopped cherry tomatoes
0.5 lime
1 can lights coconut milk
Salt & pepper to taste
Method:
Heat the oil in a large pan. Add the ginger, scallions, garlic and chili’s and cook for 4 mins. Add the curry powder, cumin powder and stir for 1 min. Add the lentil, coconut milk and cook for 10 mins. Now add the chickpeas and cook for a further 10 mins. Now add the cherry tomatoes, spinach, lime juice, salt and pepper and cook for a further 3 mins. Add the coriander right before serving. Serve with rice or pita breads!
