Purple sweet potato smoothie! Monday can only be good when you start it off like this: creamy sweet potato and banana base topped with granola, pecans, pumpkin seeds, frozen blueberries and peanut butter. For the smoothie, I baked a purple sweet potato at 425F for 40 min, then peeled the skin and froze the inside of the potato overnight, and blended it with two frozen bananas, a scoop of vanilla protein powder and a splash of almond milk ✨

Extravagant cooking? I am often asked if there is a lot of effort behind my food creations, if I only make my food look good for the pictures. It is my priority to serve food in an aesthetic way, but it’s still easy for me.✨
Mainly because it really makes me feel good, because I like to put love into my meals. However, when we prepare our food more mindfully and most importantly- by ourselves and enjoying the process rather than getting it done because we need to -not only the taste but also the connection and appreciation to the meal is strengthened. It makes a major difference preparing your meal from the whole food, appreciating all ingredients and knowing whats inside, instead of warming up instant meals. Also since becoming vegan I eat a lot more diverse and colorful and try new combinations each day, which is really easy when you learn to think in different ways and you naturally just get more creative with combining different plant foods. 
 It is always fascinating for me to see how the food we eat has such an impact on the way we feel, but also how it can stress us if we care to much about it.
Finding your personal balance and enjoyment with food can really help you to be happy and healthy.

Can you train your gut? ⠀⠀ ⠀⠀ ️‍♀️ As our body adapts and transforms with physical activity, is it possible to train our gut to better absorb certain nutrients⠀⠀ ⠀⠀ ‍‍ The answer from the experts is a clear yes.⠀⠀ ⠀⠀ Different studies showed that the GI (gastrointestinal) tract adapts and optimizes depending of what type of food we eat. ⠀⠀ If we digest more carbohydrates, it will become better at increasing the capacity/speed of absorption of carbs, same could happen for other nutrients.⠀⠀ At the moment, there are not a lot of proven strategies on how to best create an adaptation, so more studies are necessary. ⠀⠀ ⠀ A recent paper, published on the Scandinavian Journal of Science and Medicine in Sports from a group at Monash University in Australia , showed how a two-week “repetitive gut challenge” to train the gut, improved absorption of carbohydrates and improved running performance.⠀ ⠀ The study was conducted on 18 runners ‍♀️ that for two weeks had to run one hour a day and take a specific carbohydrate drink.
