INGREDIENTS
400g plain unsweetened soy yoghurt
1/2 tsp salt
1 tsp nutritional yeast
thym
basil .
METHOD
1. USE a BIG bowl and add 2 CLEAN dishtowels to it. Add the yoghurt. This is the tricky part: you need to find a way so that the excess water soaks out in the towels but also avoid touching the bottom of your bowl (hence why I took a big bowl and secured with an elastic bowl toper. you could use a string or like a heavy plate that holds everything.
2. Overnight or 8h in fridge.
3. Then add remaining ingredients
4. Keep in airtight container or eat right away

Peanut butter chocolate granola;
5 tbsp dedicated coconut
4 tbsp cacao nibs
100g oats of choice - I used jumbo
3 tbsp ground flax
2 tbsp buckwheat flour
3 tbsp maple syrup
4 tbsp chunky peanut butter

Warm berries;
600g cherries pitted
1-2 tbsp maple syrup
1/2 tsp almond essence

To serve;
Coconut yogurt
Fresh mint

To make the granola;
Mix the dry ingredients together in a bowl, now add in the maple syrup and peanut butter.
Stir thoroughly until you get a crumb (get your hands involved).
Pre - heat your oven to 180c
Add the mix to a large baking tray, spread out.
Bake for 10 -15 minutes or until lightly toasted - mix halfway through.
Set aside.

To make warm cherries;
Add everything to a pan and heat on a medium to high heat until the cherries have broken down a little
To serve;
Spoon the cherries into pots or small bowls, top with granola and creamy cold coconut yogurt.

My Moroccan spiced soup just might be one of the heartiest and tastiest soup I’ve made to date. Rich and wholesome lentils, chickpeas in a lovely warming spiced tomato sauce. I love this combination of spices (cumin, cinnamon, turmeric, smoked paprika & chilli) as it gives a gorgeous smokey flavour. So so good and helping me brave the thunderstorm outside ...

Raspberry and Tahini Cups
I wish I still had some of these beauties in my freezer. Sometimes I get so excited developing new recipes, I forget to go back and revisit my favourites. I'm certainly going to have to make these again soon
Recipe:
Base = process 1 cup cashews, 3/4 cup desiccated coconut and 2 tbsp melted coconut oil until combined.
Divide mixture between 8 silicone moulds and push up the sides with a spoon. Place in freezer.
Filling = process 1/2 cup Tahini, 2 cups frozen raspberries, 1/3 cup rice malt syrup. Pour into cups and return to the freezer until set.
Top = in a metal bowl over simmering water, melt 100g dairy free white chocolate, 2 tbsp coconut oil and 2 tbsp tahini. Spoon over raspberry cups.
Keep cups in freezer, but allow a little time to thaw before eating.
If I pack these in lunches, I take them out of the freezer the night before and keep in the fridge. They are perfect the next day at work.
