Eesa’s dinner: corn on the cob, sweet potato fries, ground beef patties. The patties were spicy, so I put a spoon of ricotta cheese on it. Ees ate the whole ground beef patty, the whole corn I gave him, and a few bites of the fries. I sautéd onions in olive oil, then added carrots, peas and ground beef and cooked it up, then put them into puff pastry and baked in 350 for 15 min. Yum. #blessed #allergykid #toddlermeals #eesaeats
I wanted to make tuna casserole. But I didn’t love the recipes I found. So I made something. Lol. I first cooked my pasta elbows el dente. Then while that was draining, I boiled milk, butter, lemon juice, paprika, chili, onion soup mix by Lipton, salt, pepper, and cheese. Then added my veggies, let those cook up in the sauce, mixed it all with the pasta, and tuna topped it with cheese (the breadcrumbs have sesame, so I didn’t use them). Baked it on 350 for 25 minutes. Eesas lunch: mini bagels with cream cheese and blackberry jelly. He had a glass of milk on the side. Eesa stood on the sto with me and helped spread the cheese and jam himself. I’m still not sure if that’s what’s inspiring him to try these new foods or if he’s more hungry. KETO DINNER: this was loved by my keto self, my allergy kid, and my husband. And it was SO EASY. I put the salmon on a baking tray with foil. I melted 1/2C of butter and mixed in the juice of 1 lemon and 1 lime. Then I poured that over the salmon. Then I sprinkled salt, black pepper, garlic powder and paprika all over, and some fresh dill all over. Then I sliced up the used lemon and lime and used those slices atop the salmon.
