Nina could eat this dinner a thousand times over, she demolished her plate!! This recipe takes 10 mins to prep and 20 for you to relax while it cooks away in the oven! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’ve served it with a lemon and garlic yoghurt dip.. what would you go for? Ketchup? Mayo? Both? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients; (Serves four) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 75g of panko breadcrumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 400g of chicken breast cut into strips ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 egg ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 30ml of whole milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 2 tablespoons of plain flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 3 large sweet potatoes ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 3 teaspoons of smoked paprika ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1.5 tablespoons of ground nut oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method; ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1) Preheat your oven to 200d/ 380f. Peel and chop your sweet potato into chip shaped fingers. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2) Spread over a large baking tray, sprinkle with half the oil and half of the smoked paprika. Using your hands or two spoons give the chips a toss to cover evenly. Bake in the oven for 25 minutes turning halfway through. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3) Meanwhile, coat the chicken strips in the flour (I do this in the tub the chicken comes in) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4) Then place the floured chicken into one food safe bag, add the egg and milk, seal and give it a good squish so the yolk breaks and all the chicken is now coated in a wet batter. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5) Now add the breadcrumbs and the remaining smoked paprika to the same bag, seal and shake so every piece of chicken is coated. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6) Place the chicken onto a baking tray, drizzle with the remaining oil and bake for 20 minutes, which should be the same time as your chips are done. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This recipe is suitable from 6 months. Cut the chicken into thinner strips so it’s easier for baby to hold. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ❄️ You can freeze the chicken once coated in the breadcrumbs. Here is what my little guy ate today. We had some errands to run around lunchtime so I packed both his lunch and afternoon snack. I tend to serve meals and snacks around the same time everyday as routine really works for us and allows him to build up hunger between meals. He has access to his water bottle all day. ➡️ Breakfast - spiced pear oatmeal - his all time favourite breakfast! Recipe in my E-cookbook ➡️ link in bio ➡️ Snack - kefir chia pudding. He asked for some cinnamon on top. Recipe further down my feed. ➡️ Lunch - spelt pasta salad with baby corn, peppers, avocado & hemp hearts, cucumber and cheese. The red peppers were for exposure and as I expected he didn’t eat them! ➡️ Snack - walnuts, carrots and a sweet potato muffin (recipe testing!) ➡️ Dinner - homemade haddock fish fingers, air fryer chips and minty peas. . . . NOTE: No whole nuts for under 5’s. I break the nuts into small pieces because I’m comfortable with this and he is proficient at chewing. Another easy peasy baked salmon idea for ya! Just cook it in olive oil, pink salt & cracked black pepper! Paired here with rice sprinkled with yuzu furikake & peas! . Are you and your kiddo getting sick of the same ol’ sandwich? Perhaps you have a nut allergy in your family or can’t bring nut products to school. Here are some simple options that are balanced, tasty and easy to put together. Maybe some of them will work for your family! Will you tag a friend who loves getting new meal ideas? • These are open-faced sammies so you can see the fillings - add bread on top! • Shown is @traderjoes sprouted bread, and we also love @daveskillerbread - watch for big seeds for kids under 4 and honey for babies under 1 when choosing bread! • We like BPA-free canned wild salmon as an affordable way to get more omega-3 fats in our diet. Well...you can just give it to them and see how it goes, but if they stuff it all in their mouth or can’t figure out how to eat it we have a few Foodie Judy tips for you - swipe through to see some serving ideas from a previous post. 1) 6+ months: offer deconstructed sandwiches as toast strips with hummus, salmon salad, pesto etc. spread on top. Toasting the bread helps baby feel the food in their mouth and is actually easier to eat than stickier untoasted bread. 2) 10+ months: once a baby has a more sophisticated palmar release/pincer grasp, try toasted sandwich triangles with the fillings inside. Start modeling putting the sandwich down between bites. This will help them slow down and focus on chewing what’s in their mouth. • Continued in comments
