✨Recipe below✨ . . I enjoy cooking! Playing around with flavors and ingredients is something that I've enjoyed since I began my vegan journey almost 11 years ago. But since becoming a mom, I haven't really had the time to try out new recipes. . . Most of the days I lack the energy to try something new, finding myself rotating similar dishes week after week because they're easy to make and nutritious. I hear the lack of energy from many of you and I just want to say that you're not alone. I have those days too! . . Motherhood is hard, finding time to cook is challenging, but the joy of nourishing your #veganchildren is always there. . . That's why I want to share this practical recipe with that you can meal prep one day and store it for a later day. Or simply enjoy it as a #familymeal that same day! . . This week one of our family meals consisted of a #butternutsquash mac & 'cheeze'. This was the first time my daughter had a vegan version of mac & 'cheeze' and she ate most of what I offered. She seemed to do well with grabbing the pasta (I used @eatbanza for her for extra iron) and putting it in her mouth. This was also the first time she had a brussels sprout and it was great to see her explore a new food! . . Recipe for the #butternutsquash mac & 'cheeze': - 1 medium butternut squash (about 4 cups cubed or 780gm) - 1 tablespoon of olive oil - 1/2 onion, cut in chunks - 2 garlic cloves, whole - 4 tablespoons nutritional yeast - 2 cups of water - Place squash, onion, and garlic in a baking dish and coat with olive oil. Roast at 350F for 30-35 minutes or until squash is soft. Transfer to a blender, add nutritional yeast and water, and blend until smooth (adjust liquid for desired consistency). What's your favorite family #vegan meal? Share in the comments below . . One of our favorite meals is Red Lentil Dahl. We practically have this dish on a weekly rotation because its really easy to make, it's so flavorful, and does well for leftovers (which I'm a fan of!). This dish is packed with #plantprotein, fiber, and iron which are key nutrients for the whole family. . . My daughter has been eating a lot more lately. She has learned how to request for more, especially an item that she really enjoys (i.e. all fruits and broccoli). This red lentil dahl paired with her favorite vegetable was a meal she got seconds of. I will say that only about 50 - 60% of it made it to her mouth, while the rest landed somewhere on her high chair or splat mat. #BLW is messy and I've learned to embrace the mess! . . I usually include her goo-tensil from @numnuminc during meal times but I allowed her to fully eat with her hands with this meal. I mixed the rice and red lentils together to make it easier for her to grab a good amount. . .
