Decided to stop fermenting his meat and instead do a short brine with much less salt to extract some blood. A kind of compromise. We’ll see how he goes. In other news.. I found a game meat company operating 1.5hrs drive from us, and what’s better they have some non-farmed “wild” meats including venison, boar, kangaroo and wallaby. I was incredibly excited to talk with the owner. Naturally I put my hand up for offal and bone-in cuts. As I was chatting to him about Noah’s unique situation he shared with me his own personal health battles and went on to recommend a naturopath with 40+ years experience who treats with homeopathic and herbal remedies. He’s semi-retired and doesn’t charge too much. From what I gather he does a finger-prick blood test to identify root cause and treats accordingly. Fate you think? I’m ready to delve further and get some good bells and whistles going anyway, and I simply can’t go past a good recommendation. LAMB | fermenting his meat. Feels crazy. But then I remind myself that grey-corned beef is a thing. I’m hoping this will help Noah tolerate meat again. He does well on the fat around meat and bones and lamb offal, but had issues with the meat itself.
