INTUITION AND FATE | in this game of keeping up my head is constantly spinning trying to decide what’s what, and often I just have to go with my intuition. Sometimes it’s the littlest signs. However diluted it was, it was still too salty. I tried lowering salt in dosa and I back-peddled pretty fast given it lost its “tang”. The “tangy” taste comes from lactic acid bacteria once it consumes the simple carbs. So the absence of tang was no good. But I’m truely bothered by how much salt he’s consuming. Decided to stop fermenting his meat and instead do a short brine with much less salt to extract some blood. A kind of compromise. We’ll see how he goes. In other news.. I found a game meat company operating 1.5hrs drive from us, and what’s better they have some non-farmed “wild” meats including venison, boar, kangaroo and wallaby. I was incredibly excited to talk with the owner. Naturally I put my hand up for offal and bone-in cuts. As I was chatting to him about Noah’s unique situation he shared with me his own personal health battles and went on to recommend a naturopath with 40+ years experience who treats with homeopathic and herbal remedies. He’s semi-retired and doesn’t charge too much. From what I gather he does a finger-prick blood test to identify root cause and treats accordingly. Fate you think? I’m ready to delve further and get some good bells and whistles going anyway, and I simply can’t go past a good recommendation.
