I’m fascinated with the connection between the gut and the mind. Our gut is the second brain. It’s lined with trillions of bacteria that digest food. In yesterdays post about what #candida is. I stated that step 1️⃣ is to starve the yeast by eliminating the foods that feed it. This includes cutting all sugar and alcohol and limiting carbohydrates such as fruit, starchy vegetables, grains, and legumes to no more than 2 cups per day. ___________ WHY 1. Excessive alcohol consumption: Again, hopefully, you’re limiting alcohol already, but it is particularly important to cut out beer and wine while getting your yeast in check. Wine is not only fermented (meaning it is made from yeast), it is also high in sugar. And beer, which is also fermented, contains gluten. All of these factors contribute to Candida. 2. High carb diets: As you know, gluten is highly inflammatory. It’s also a grain, and all grains are broken down into simple sugars during the digestive process, which can feed Candida. That’s why I recommend avoiding them entirely (particularly if you have an autoimmune disease) or limiting your intake of them. Sensitive to almost all other nuts/seeds, so another batch of roasted pumpkin seed butter it is! . To be honest though, I’m really struggling right now. Finding out from my holistic doc i have leaky gut and am now sensitive to so many different foods and have to eliminate them to reset my body has been extremely difficult. I broke down at dinner with my family last night because there was nothing for me to order. It’s frustrating, embarrassing, and really disappointing. Just when I’m finally ready to eat like a “normal” person and not have any food groups off limits, i have to do all this. It’s just hard to see the light at the end of the tunnel, especially since this kind of stuff can take months to years to heal. But I’m going to get through it. I’m going to come out on the other side wiser, stronger, and ready to say to any rules and limitations i had once set for myself. . There are LOTS of worse problems i could have, but this is where I’m at and I’m sad and a bit angry with myself. That’s my truth. • • • Here’s how to make the roasted pumpkin seed butter: • Pour 3-4 cups of pumpkin seeds onto a baking sheet(s). • Roast at 350F for about 10 minutes, stir seeds around, and place back in for a few more minutes. Up to you how roasted you want them. • Pour the seeds into a food processor, pulse a couple times, then blend full speed. It’ll get really thick and chunky at first, but then eventually smooth out into a nice seed butter consistency. • It takes a while so have some patience, and keep an eye on it and scrape the sides of the food processor occasionally with a spatula to keep things moving. • At the end i added a couple tsp sea salt and a big drizzle of maple syrup. Feel free to mess around with different spices and flavors!
