Sharing this recipe again because it’s super easy, hearty, and versatile.
Overnight (or 30 minute in the fridge) oats with coconut. For the base I used the following:
1/2 cup pure coconut milk (you can get the light version for a thinner consistency)
1 Tb chia seeds
1/3 cup rolled oats
1 tsp vanilla (optional)
Cinnamon or for spice- cardamom (optional)
*utilizing spices for flavor is a way to reduce added sugar in recipes
Mix all ingredients together in a small bowl, cover, and let sit in the fridge for enough time just to soften. Then just add in your toppings of choice. I like to add in different textures since the oats are very soft. So like, walnuts or almonds with fresh fruit (berries, sliced mangos, banana, etc), unsweetened coconut flakes, and sometimes a few raisins or dried figs. Whatever your preference!
