Birthday Lunch. Nom Nom Restaurant: Shin Sushi Location: Encino, CA Type of Food: Sushi/Japanese Michelin Rating: 1 Star (2019) Food (8.5/10): I ordered the omakase (chefs choice). You also have a choice of doing the lunch special which was reasonable 10 pieces plus roll or order from menu. This was a 21 course meal. So the first course started with tomato, okra, and smoked Toro. Next dish was Mackerel from Japan which was sweet and smooth. After that it was baby snapper from Japan. Every dish afterwards was presented perfectly with the right balance to exemplify the fish. The fish consisted of Isaiah, Kurodai, Wild Salmon from Japan, Bluefin Tuna, Tofu Miso, Kamasu, Kanpachi, Sawara, Ali, Sakura Masu, Bluefin Medium Toro, Hokke, Menegi, Baked Salmon, Engawa, Hamachi Handroll, Suzuki And Tofu Mousse. Majority of the dishes were from salmon and the chef goes to the market everyday to bring the freshest ingredients. All sauces are made in house. Service (7/10): The staff consisted of the main sushi chef, waitress, and 2 people in back kitchen. The chef was very friendly and explained all the dishes well, what region they are from and if you should have extra soy sauce or not. Only negative is that i felt at times it was a little cold and too serious. Didn’t get that warm feeling that i am used to for an establishment like this. Ambiance/Decor (7/10): When you walk in you have 8 seats at sushi bar which I recommend to sit at and 4 tables behind you. I liked the layout of sushi bar. Very clean and simple and the plates they used were very traditional japanese. The only negative was the bar seats which were very uncomfortable to sit in. It felt very homey in the place. Cleanliness (8/10): The place was very clean. Each time the chef gave me a piece of nigiri he would clean up afterwards. The back kitchen was very clean also. Total Score (30.5/40): I would say the quality of the food here is on par with the top sushi places in Los Angeles. If you don’t want to spend much and want to get to sample the quality of the fish I would get the lunch special. But if you truly want to get the whole experience you have to get the omakase. #omakase #shinsushi #encino #losangeles

5-Star Boneless American Wagyu Ribeye by @mishimareserve Yo… This one aint playin’ around. Mishima reserve sent me a Boneless Ribeye in Each of their gradients of quality and first up is the middle player. This 5-Star. American Wagyu Ribeye was no joke! I will be preparing each of these the same way so that I can keep the playing field as level as possible and focus entirely on the taste of the product. I cleaned the meat and added a heavy coat of @maldonsalt and Black Pepper, then sealed it and let it dry brine for 8 hours before putting it in the Sous Vide. Since this cut is a little thicker than normal, I had it in the water for 3 hours at 128 degrees. After letting is rest and return to room temperate, I quickly seared it on the skillet and finished it with some @kerrygoldusa and sliced it to serve. The texture of the meat was astounding. The Cap melts in your mouth. The eye (typically a bit more chewing needed) was also very soft. Fat is flavor and this cut was packed with both! I boiled and smashed some yellow potatoes and coated them with a Garlic Butter. I got that idea from @thecookingguy and they turned out garlic-y and delicious. Thank’s Sam! This weekend I will be cooking both the 4-Star and the Premium Grade Steaks for review and then creating a post comparing the 3 and their flavors. Restaurant: Kagaya Location: Downtown Los Angeles, CA Type of Food: Japanese Shabu Shabu Food (8/10): This place is a shabu shabu restaurant which means that they bring raw meat that is sliced thinly and you cooking it in boiling hot water and dip it in 2 different sauces. The menu consists of usda prime set, a5 japanese wagyu or a mix beef and seafood set. For this visit, I ordered the USDA Prime Ribeye set. The set consists of 3 appetizers which changes every week, 8 oz of beef, glass noodles, napa cabbage, other greens, tofu, mushrooms, rice, green tea, a choice of udon or rice soup and dessert. My first appetizer consisted of a yellowtail tofu dish which was very refreshing and flavorful. The second appetizer was a soup with eel which was my first time trying which had a clean fish taste to it with a flavorful soup broth. The third appetizer was cooked cod on a spicy green sauce which was decent but the sauce gave it a heightened spiciness that went well with the dish. After the appetizers were done, the server brought the beef, the veggies, the 2 dipping sauces (ponzu and sesame), and rice. The beef had full of flavor and went well with both dips and the veggies with the ponzu sauce gave a great flavor. After the main course was done, they ask you if you want to have udon noodles or rice soup because they take the left hot water broth and mix with. Its a good way to end a nice meal, the rice dish consists of egg and plum which give it a nice sourness with the flavor from the hot broth. I ended the night with a banana cake which was of the best banana desserts i had. Service (8.5/10): Once I enter the restaurant, they greeted me quickly and sat me down. They explained the menu clearly and answered any questions my party had. Each time my tea got empty they would fill it without me even asking and would check up on the table throughout the night. Restaurant: Pizzeria Mozza Location: Hollywood, Los Angeles, CA Type of Food: Pizza/Italian Food (8/10): The food here consists of variety of pizzas that are cooked in a hot wood fire oven. They also have a small selection of appetizers, salads and panini’s. I started with the mozza caprese which is burrata cheese topped with roasted grape vine tomatoes and homemade pesto sauce. This dish was creamy, delicious and an amazing starter to the meal. You have the order it with the garlic toasted bread it was perfect way to enjoy both dishes. The next appetizer I ordered was the cauliflower grittier which came with side of spicy mint aioli. The cauliflower was perfectly fried, it had a nice crunch to it and it was delicious. The sauce that accompanied the dish well balanced the cauliflower. The next dish I ordered was the Nancy chopped salad, which is a huge salad which was delicious, but i have had better salads. Now comes the main course the margarita pizza. The Margarita pizza uses california grown tomatoes for the sauce and mozzarella di buffala from Italy. The pizza dough had right amount of chewiness and flavor. The sauce was different from what I’m used to, thicker and a little bit more spice which I enjoyed. I only negative of the pizza was there was too little amount of cheese compared to the sauce and felt the cheese did not melt well because it would fall off when your eating the pizza. The last dish was dessert which was the butterscotch dish. If you love butterscotch this is very delicious, a rich Carmel flavor. Service (8/10): The service here was amazing. When I sat down they explained the menu and what there specials are and what the waiter recommends. They brought the dishes in order instead of all at once and with each dish would clean the table.
