#marchmeetthemaker Day 17: What Are You Working on?: It’s so fitting that this is the prompt for Paddy’s day! I’m currently working on a goldwork series of Irish foods ☘️✨ . I wanted to try learning more goldwork techniques after making a piece in cutwork (swipe to see it!). While researching I realised I was seeing a lot of military and ecclesiastical pieces. Goldwork has always been used as symbols of wealth and power, two things the Irish have historically lacked. I decided I wanted to do something that celebrated the culture of Ireland, no Guinness or leprechauns ‍♀️ I remembered seeing irish meat and dairy sold as premium products over seas and the foil wrapper on butter was perfect for goldwork! . The response to my Kerrygold piece was overwhelming, it was clear I was onto a good thing. I started thinking about other Irish foods, the things people miss when they go to live abroad (a common occurrence here). Everyone I spoke to about it had a suggestion and now I have a list as long as my arm . RecipeSlow Cooker Irish Dublin Coddle (Paleo, Whole30) __ Bacon, sausage & potatoes! Serve this simple yet heart Irish dish for breakfast (it’s great with eggs), lunch or dinner. For more pics & info https://fitslowcookerqueen.com/slow-cooker-irish-dublin-coddle (click link in profile). __ Slow Cooker Irish Dublin Coddle (Paleo, Whole30) 1 lb sausage, sliced 3/4 lb bacon, sliced 1 cup low-sodium beef broth 1 garlic cloves, minced 2 small onions, chopped into large chunks 1 lb potatoes or sweet potatoes, peeled and cut into large chunks (I used white sweet potatoes) 2 tbsp fresh parsley, chopped Salt and pepper to taste Instructions Cook bacon and sausage over medium heat until browned, almost fully cooked. Drain any grease. Add all the ingredients to the slow cooker Stir until well combined. Cook HIGH 2-3 hours or LOW 4-6 hours.
