How-to-make:
Preheat oven to 375 F. Place the pastry in a pie pan and prick several times with a fork.
Spread the mustard and crème fraîche over the bottom of pie, then sprinkle with sage.
Wash the carrots, eggplant and zucchini and cut in lengthwise strips using a peeler. Cut so as to have always show a small strip of skin for decorative purposes.
Roll a strip of zucchini into a spiral and place in the center of the dish (with the skin of the vegetable up), then surround it with a few strips of carrots and eggplant until reaching the ends of the dish.
Drizzle olive oil over all. Season with salt and pepper.
Bake in a preheated oven for 40 minutes of cooking.

Recipe
Beans: Cook 1 chopped onion (small dice) in a little vegetable broth or sauté in olive oil until translucent, about 7 minutes. Add 3 minced garlic cloves and cook another minute. Mix in 1 tbsp tomato paste. Add 3 cups cooked black beans, 1 tbsp vegan Worcestershire sauce, 1 tbsp Dijon mustard, 1 tsp maple syrup and 1 tsp sriracha. Add desired amount of vegetable broth or bean liquid and simmer about 10 minutes, adding more liquid as needed. Salt and black pepper to taste.
Sweet potato: prick sweet potato all over with fork. Bake on lined sheet at 400F until thickest part of potato is easily pierced with fork. Once cool, slice open with a knife and add tahini and red chili flakes.
Corn: use tongs to hold end of corn and turn slowly over gas flame on stove until evenly charred. (Brush vegan butter or olive oil on corn after cooking, squeeze lime and chili powder if desired.) Plantains: slice very ripe plantain into about 1-1/4 inch pieces. (Optional: brush lightly with olive oil.) Cook in air fryer or oven at 400F until lightly browned. Serve with mashed avocado and chili flakes. Salt to taste.

Strawberry Coconut Popsicles by @astepfullofyou (Vegan, GF)
-1 can full-fat coconut milk⠀
-1 cup coconut yogurt
-1/4 c maple syrup⠀
-1/2 c frozen strawberries⠀
-1 tsp beet powder⠀
-1/4 c homemade granola⠀
⠀
1. In a blender, blend coconut milk, yogurt, and maple syrup together until smooth.⠀
2. To make the gradient colors, add 1/4 cup frozen strawberries into blend and blend for a light pink color. Pour into 2 popsicle molds.⠀
3. To add a darker color, add the remaining 1/4 cup frozen strawberries, blend and pour into 2 molds.⠀
4. Add 1/2 tsp beet powder into blender and blend until smooth. Pour into 2 popsicle molds. Repeat step with remaining beet powder.⠀
5. Place in freezer and freeze for 20 min. Remove from freezer. Add the granola into the popsicles molds. Place back in freezer and freeze for 1 hr.⠀
6. To remove popsicles from mold, run hot water over the mold for 30 seconds and gently pull out. Enjoy!⠀

Ingredients
Rice paper
7-10 sheets rice paper
Vegetables:
1/2 avocado sliced
1/4 cup each of green, red and yellow pepper sliced
One zucchini spiralized or finely cut
One carrot spiralized or finely cut
One cucumber spiralized or finely cut
1/4 of a small red cabbage, shredded
1/2 can chickpeas
Noodles:
100-150 g cellophane noodles or rice noodles
Pinch of sea salt

Instructions
1. Boil the noodles as per the instructions on the packaging, discard the hot water and rinse with cool water. Optional: Color one part of the noodles with beet juice and stir until all the noodles are pink. You can color the other part with a little bit of spirulina powder (for a nice turquoise color) or with turmeric powder (for a nice yellow color), get creative!
2. Finely cut or spiralize your veggies and fruits (in case you want to use fruits too)
3. Roast chickpeas with a little bit of oil and soy sauce (optional) in a saucepan
4. Fill a large bowl or pot with water and completely dip your rice paper in the water for about 10-20 seconds. I am using the following brand of rice paper
5. I used a lightly greased parchment paper on my working surface, to avoid that the rice paper sticks to the surface. Place your (cooled) noodles and veggies in the center of the rice paper and a bit in front of it
6. Roll it up carefully, it's a bit tricky since the rice paper is very thin and can burst easily. I always seal the sides first
7. Dip in sauce, of choice, for example, soy sauce or peanut butter sauce.
