Ingredients

1. 4LB Russet Potatoes, peeled and rinsed
2. 4 Large Eggs
3. 1 Cup Shredded Parmesan Cheese
4. 8 Slices Cheddar Cheese
5. 8 Slices Deli Ham or Turkey
Optional: Cayenne Pepper, Garlic Powder, Onion Powder, Olive Oil, Fresh Chives

Directions
1. Preheat oven to 400F.
2. Shred the peeled potatoes using a cheese grater, transferring to a large bowl and soaking in water for 3 minutes.
3. Drain potatoes and squeeze dry using a wash cloth.
4. In a bowl, add salt, pepper, optional spices, olive oil, potatoes and parmesan cheese together and mix.
5. Add potato mixture to a greased baking pan and bake for 1.5 hours or until potatoes are golden.
6. Take potatoes out of the oven, and using the bottom of a glass, press 4-6 wells into the potato mixture.
7. Layer the edges of the wells with ham and cheese (alternating).
8. Crack an egg into each of the wells.
9. Return baking dish to the oven, and bake another 10-15 minutes.
10. Remove and let cool 10 minutes.
11. Serve!

The pie has baked and been delivered to mom & dad.
I roasted chicken legs, made chicken gravy, added red potatoes, carrots, onions, sweet peas and seasoned it well with herbs de provence and s&p.
It’s a simple butter crust with fresh thyme mixed into the dough.

My favourite way to eat rhubarb is also the simplest: In a compote. Here's the recipe:

Combine 4 cups of chopped rhubarb, 1/4 cup of granulated sugar and 1/4 cup of water in small pot. Cover and bring to a boil, then reduce heat and simmer (covered) 15 min or until tender. Taste and add more sugar, 1 tbsp at a time, as desired. Cool to room temperature then store in the fridge.

Spoon the resulting sweet-tart mess of pale pink over vanilla ice cream with some crushed amaretti cookies and a splash of Amaretto. Or use rich vanilla yogurt (such as @libertecanada 9%) or anything equally creamy & delicious.
