Here it is for those who have been asking. My hotdog macaron assembly video!! I had to make more of these today because I forgot to record myself making them yesterday. The “buns” are of course, the macarons shells. The “hotdogs” are made out of red buttercream icing, the “grill marks” are made with black gel food coloring, and the “mustard” is made with yellow royal icing! Here is how to macaronage after adding almond flour + powdered sugar mix when using French method for making macaron shells! Hint: When you pick the batter up with a spatula and let it fall back into the bowl, a ribbon should form and the batter should be bright. The speed at which the batter falls down to the bowl should be relaxedly; not too speedy. (Note that the video is 1.5 times speed up for Instagram post!)

#astuce #macaronage , je me suis dit mais pourquoi je dois macaronner à la main à force ça fait mal, je me suis dis allez je tente si ça rate tant puis je referai d’autres, j’ai monté d’abord ma meringue( Blanc d’œuf , une pincée de sel avec sirop à 118 degrés ) , j’ai mélangé à côté mon tant pour tant avec les blanc d’œuf et colorant ( pour les couleurs foncés je mélange d’abord mon colorant avec le blanc d’œuf et ensuite je verse sur le tant pour tant ) , j’ai rajouté ce mélange sur ma meringue italienne et j’ai activé le fouet vitesse 1 pendant 2 fois juste activer et arrêter , ensuite je suis passée de vitesse 1 a 10 en arrêtant de suite juste un va et vient pendant 3 fois , et enfin j’ai mélangé avec la Maryse et résultat impeccable sans forcer sur les bras ( attention si vous êtes débutant éviter cette technique ça peut virer vite au cauchemars , vous êtes prévenus )
