Winning feeling!⠀ .⠀ I used a big bed of power mix (my favorite bagged blend with green cabbage, kale, broccoli stalk, julienne carrots) mixed with some chipotle sauce, salt, and fresh lemon juice as the base. Then piled on more veggies (broccoli, , cucumbers, and some leftover diced up steak. All drizzled with even more lemon. Who says “diet food” has to be boring?!

Recipe credit: @sara.haven 1️⃣ JUST Egg is plant-based product made from mung bean, which contains a protein that tastes and scrambles...well, just like eggs •• Trader Joe’s ‘everything but the bagel’ smoked salmon (obsessed) •• sautéed cruciferous crunch w/ olive oil, lemon, garlic, and parmesan •• grain-free bread toasted and topped with smashed avocado •• two slices grilled . 2️⃣ This pancake recipe is my go-to when I’m feeling more ambitious than usual (read: I typically use add-water-only mixes‍♀️, but it actually comes together quickly, and the leftovers can be stored in the fridge or freezer for easy pop-in-the-toaster breakfast prep Sweet Potato Cashew Butter Pancakes: ¼ cup coconut flour • ¼ teaspoon cinnamon • ¼ teaspoon baking soda • 2 tbsp. cashew butter (can sub any nut butter) • 2 eggs, slightly beaten • 1 egg white, beaten stiff (optional, but makes the pancakes fluffy) • ½ tbsp. honey (you can sub stevia or another sweetener) • 3 tbsp. mashed sweet potato • 3 tbsp. almond milk (can swap pumpkin purée) • 1) Combine first two dry ingredients in a small bowl. In separate bowl, stir nut butter, eggs, maple syrup (or honey), and pumpkin. Slowly stir in almond milk. Add dry ingredients to wet, stir until well combined, then let batter sit for a couple minutes. Beans, tomatoes, some veggies and some sauces are perfectly good, cheap and convenient options for meal prep! I love buying canned ingredients because they last a long time. Nothing unhealthy about them in my book and I don’t have the patience for soaking beans. . Q: how long do your groceries last? A: perishable ingredients only sit in my fridge for a day or two and then I meal prep with them long before they spoil! I buy fresh produce every week. Ingredients like chicken sausage, tortillas, pasta etc last a long time in my pantry/fridge/freezer. . Q: do you ever buy organic? A: sometimes but I don’t go out of my way to buy organic. Follow us (@simplyfitsociety) for more⠀⠀ .⠀⠀ By @lastingredient⠀⠀ .⠀⠀ Chickpea & Spinach stuffed Sweet Potatoes Stuffed and baked potatoes are such a popular dinner option, and why wouldn't they be - they're easy, delicious, and perfect for adding your own distinct touch!⠀⠀ ⠀⠀ Recipe ✨ ⠀⠀ Ingredients:⠀⠀⠀ 4 medium sweet potatoes⠀⠀⠀ 1-15 ounce can chickpeas⠀⠀⠀ 1 tablespoon olive oil⠀⠀⠀ 1 teaspoon kosher salt⠀⠀⠀ 1/2 teaspoon black pepper plus more for serving⠀⠀⠀ 1/2 teaspoon cumin⠀⠀⠀ 1 cup baby spinach, roughly chopped⠀⠀⠀ 2 tablespoons tahini⠀⠀⠀ Flaky sea salt for serving⠀⠀⠀ Crushed red pepper flakes for serving⠀⠀⠀ ⠀⠀⠀ How To Make:⠀⠀ Preheat the oven to 375 degrees F. Prick the sweet potatoes with a fork and roast for 45-55 minutes until they are just tender. Let the sweet potatoes cool for 5-10 minutes before halving them lengthwise and fluffing their flesh with a fork.⠀⠀⠀ While the sweet potatoes are roasting, make the crispy chickpeas. Drain and rinse the chickpeas. Pat them dry with paper towels. Remove any loose outer skins. In a small bowl, toss the chickpeas with 1/2 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and cumin. Spread them in a single layer on a parchment paper-lined sheet pan. Bake for 25 – 35 minutes until crisp and browned, gently shaking the pan about halfway through cooking.⠀⠀⠀ While the sweet potatoes and chickpeas are roasting, heat the remaining olive oil in a large skillet over medium high heat. Sauté the spinach until the leaves start to wilt, about 2 minutes. Add the garlic and remaining salt and pepper, and continue cooking until fragrant, about 1 minute.⠀⠀⠀ Top each of the sweet potato halves with chickpeas and spinach. Drizzle with tahini and sprinkle with flaky sea salt and red pepper flakes before serving. Enjoy!
