Makes 9 blondies
⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 scant cup Natural Delights ® Medjool dates (11-12 dates total), pitted
- boiling water
- 1 ½ cups oat flour
- ¾ cup almond flour
- ½ tsp baking soda
- ½ tsp fine sea salt
- ¼ cup almond butter
- ¼ cup melted coconut oil
- 2 tsp vanilla extract
- handful fresh raspberries

Preheat the oven to 350 degrees F. Lightly grease an 8x8x2 baking pan with coconut oil. Lay 2 pieces of parchment into the pan in opposing directions. Lightly grease the parchment and set aside.

Place the Medjool dates in a bowl and cover with boiling water. Allow dates to sit for 5 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a medium bowl, whisk together the oat flour, almond flour, baking soda, & salt.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Once the dates have softened, drain them, reserving the soaking water. Add the dates to a food processor fitted with the “S” blade. To the dates, add the almond butter, coconut oil, vanilla, & 2 tablespoons of the date soaking water. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Run the motor on high until you have a smooth and fluid paste, stopping to scrape down the sides of the bowl a couple times. Add more date soaking water if necessary. The paste should be the texture of pudding.

Add the Medjool date paste mixture to the oat flour mixture. Use a rubber spatula to combine. This is a very stiff batter! Press the batter evenly into the prepared pan. Press raspberries and extra chopped dates on top.

Bake the blondies for 17-20 minutes, or until a toothpick comes out clean. Let them cool completely before cutting into 9 squares. I topped mine with a mix of coconut oil and cacao powder! #sugarswap #ndmedjooldates #medjooldates

1 cup frozen cauliflower rice⠀⠀
2/3 cup frozen sliced frozen strawberries⠀⠀
1/2 cup frozen raspberries⠀⠀
2 pitted Natural Delights® Medjool Dates⠀⠀
3 TBSP creamy peanut butter⠀⠀
1 1/2 cups - 2 cups non-dairy milk (depending on desired consistency) ⠀⠀

*Add all ingredients to blender, starting with about 11/2 cups liquid. Blend on high until smooth, adding more liquid as needed for desired thickness. ⠀⠀
