Vegan MeatBalls in homemade Tomato Sauce
Ingredients for the Vegan “MeatBalls" -1 cup cooked chickpeas (or beans; lentils);
-2tbsp tomato sauce;
-¼ cup fresh parsley chopped;
-½ tsp hot smoked paprika;
-¼ tsp ground cumin;
-2 tbsp melted coconut oil;
-1 ¼ cup hemp flour (or buckwheat flour);
-Salt to taste! **Optional - ½ small onion chopped
How to prepare: If you opt for adding onions, heat 1 tablespoon olive oil in a skillet on medium heat, add the onions and sauté until soft. In a food processor add all the ingredients and pulse until well combined. If the mixture is too wet add more flour if it is too dry add more coconut oil. Preheat oven to 180°C. Lightly grease a baking sheet and set aside. Roll each ball between your hands around 1 tablespoon of dough each. Place them on the greased baking sheet. Bake for 25-30 minutes. Spoon over the tomato sauce. Serve with a side of vegetables and brown rice. Homemade Tomato Sauce Ingredients -6-8 ripe roma tomatoes, chopped;
-½ cup freshly chopped herbs (thyme, parsley, shallots);
-5 fresh basil leaves;
-3 tablespoons olive oil;
-1 tsp smoked paprika;
-½ tsp ground turmeric;
-½ cup cellery chopped;
-1 tsp coconut sugar;
-pinch of salt;
(Optional: onion and garlic they are great add ins to help boosting your immunity if you don’t have any issue digesting them)
How to prepare: In a pan add the olive oil, onion and garlic and saute over a medium heat for 1 – 2 minutes or until soft. Reduce the hear to low and add the tomatoes, paprika and turmeric, cover with a lid and simmer for 10 minutes or until the tomatoes have softened. Remove the lid and if needed smash tomatoes with the back of a fork, add the cellery, coconut sugar, herbs, salt and pepper to taste, simmer for extra 5 minutes. If you are not using it straight away. Wait to cool down and store it in an air-tide container with a dash of olive oil on top for up to 5 days on the fridge or freeze.
You can use it when making meat balls, lasagne, pasta and vegetables.

White Beans Tacos in lettuce wraps.
1 cup cooked cannellini beans
1 medium red capsicum chopped
1 medium yellow capsicum chopped
2 tomatoes chopped
1 small purple onion chopped
1/4 cup fresh coriander
1/4 cup fresh parsley
1 lemon juice
3 tbsp olive oil
1 small avocado cubed
Salt and pepper to taste. Serve it with a side of brown rice or quinoa.
