Today, I've got a beyond delicious Ramen Egg Rainbow Salad for you, made with @delmontefresh Bon Bon grape tomatoes and avocados (perfect, every single time I cut into each one of them, yaaaass).

1 large fridge-cold egg
2 cups arugula
1 cup butter lettuce
1 carrot
10 Del Monte Bon Bon Grape Tomatoes
1/2 Del Monte Avocado
2 Tbsp chopped dill
2 Tbsp lemon juice
1-2 Tbsp extra virgin olive oil
1 Tbsp mustard
1/2 Tbsp honey

1: Cook egg until ramen-style or hard-boiled. In the Instant Pot: 1 cup water, add egg rack or trivet, place the egg on top, high pressure for 5 minutes, immediate quick pressure release and for ramen-style immediate ice bath and for hard-boiled, omit ice bath and leave to cool down at room temperature for at least 10 minutes. In a regular pot: bring abundant water to a boil and once boiling carefully add the egg. For ramen-style, cook 5 minutes then remove and submerge in an ice bath. For hard-boiled cook 7 minutes, then let cool down at room temperature for at least 10 minutes.
2: Wash and spin dry arugula and butter lettuce. Peel and julienne carrot. Rinse grape tomatoes and cut in half. Peel, pit, and slice or dice avocado. Wash, dry and chop dill.
3: In a sealable container add lemon juice, olive oil, mustard and honey and shake until well combined.
4: Either assemble a plate and drizzle with dressing OR add dressing to the bottom of a jar, then dill, then avocado, then carrots, grape tomatoes, eggs, butter lettuce and arugula to take to work for lunch. This layering order will keep the avocado from browning and the lettuce from becoming soggy.
5: ENJOY!!!!
