Sourdough Cookies. They’re cropping up all over the place these days. My version is an adaptation of the famous NY Times cookie recipe (@jacquestorres circa 2007?) that I acquired from a young and talented cook by the name of @ingstagramming. She had brought a batch into the kitchen where we both worked and they were better than anything I had tasted thus far. Chef Torres shared with the world the idea of aging our cookie batters & fully hydrating the flour. Over the years I adapted the recipe for production, swapped out half the brown sugar for muscavado sugar, subbed half the chocolate with toasted nuts (best combo is whole skin-on almonds and pecans,) and most recently converted it to sourdough. I had no idea how to approach this; so I did so where it seemed natural. With the percentages. One of the driving forces of adapting the recipe this go round was adding my favorite whole grain to the flours, khorashan aka kamut. But when looking at the total amount of flour, I had to consider the sourdough starter and it’s flour...but also it’s water. Where was I going to find and subtract that water from the formula? As one needs to do when converting any recipe to sourdough? Well, I recall from my pastry days that egg whites are mostly water, and eggs are in cookie batter more for richness and emulsifying properties than for leavening; both of which mainly come from the yolks. Bye-bye egg whites! Hello Gary! How much Gary? An asston! Far more than other recipes I see floating around. This formula uses 35% prefermented flour from Gary discard. So over a third of the flour is coming from starter. Turns out, the addition of that much straight water via the starter does something magical to the dough. When baked from frozen to the correct doneness the cookies will remain soft/fluid for 3-4 days at room temp. Water is my favorite ingredient, no contest. I get asked for this recipe a lot so I figured maybe more #breadfriends would want it. Great use of sourdough discard, but soon you’ll be making starter to meet demand. I am loving my all natural journey. One of the hardest things to switch is makeup because we all have our go-to items that we’ve tried and tested long enough to know what works for us. The exciting thing about this journey is everything I’m learning about all the toxic products found in our staple items...lead, cancer causing toxins and heavy metals, formaldehyde, etc. Knowledge is power and with that knowledge, these companies will no longer be receiving my money because my health and body is more important. . Thanks to anyone who’s recommended things for me to try. I’ll keep trying new products until I have new staples for makeup. In the meantime, I’m enjoying the journey and a more “natural” beauty . .
