INGREDIENTS
• 1/2 cup raw cashews, soaked overnight* • 1/2 cup vegetable broth or water
• 1 28 oz. can crushed tomatoes
• 2 tablespoons extra virgin olive oil* (see notes for oil-free)
• 1 shallot, minced (or 1/3 cup onions)
• 10 cloves garlic, minced
• Pinch red pepper flakes
• 1/2 cup vodka
• Optional: 2 tablespoons tomato paste (helps deepen the flavor)
• 1/2 cup fresh basil, finely chopped
• 1½ teaspoons dried oregano
• Optional: 1/2 cup vegan Parmesan cheese* + more to top
• 1/2 to 1 teaspoon salt (or to taste)
• Black pepper, as desired
Additional Ingredients
• 1 lb. penne pasta of your choice
• Finely chopped basil, for garnish
Instructions
1. Bring a large pot of salted water to a boil.
2. In the meantime, drain the cashews and transfer them to a high speed blender along with 1/2 cup water or vegetable broth and half of the 28 oz. can of tomatoes. Blend on high until smooth and set aside.
3. In a separate large pan over medium heat, add in the olive oil. Once warmed, add the shallot and sauté for 2 minutes. Add in the garlic and red pepper flakes, and continue to cook until the shallots are translucent and the garlic is fragrant, about 2 more minutes.
4. Next, add in the vodka, the remaining crushed tomatoes, the blended cashew mixture, tomato paste, basil and oregano. Bing the mixture to a low boil and then lower it to a simmer. Cook, uncovered, for 15-20 minutes, or until the sauce thickens, stirring often.
5. When the pot of water is boiling, cook the penne pasta according to the package directions. Drain and set aside.
6. Once the sauce has cooked down, mix in the vegan parmesan cheese. Season with salt and pepper to taste.
7. Serve sauce over the cooked penne and serve immediately.
Non so come sia da voi, ma qui fa freddo e il richiamo di una zuppa calda e saporita è stato inevitabile. Ho quindi cucinato questo curry con noodles e verdure Ho fatto rosolare mezzo spicchio di aglio tritato con un pezzettino di zenzero (grande come il mezzo aglio) anch’esso tritato. Ho aggiunto mezzo cipollotto affettato sottile, 1 carota e 1/4 di tazza di peperone tagliati sottili. Ho aggiunto una manciata di fagiolini già cotti, 125 ml di latte di cocco e ho allungato con del brodo vegetale. Ho aggiunto 3 cucchiaini di pasta di curry rosso, 1 pizzico di curry in polvere, 1 di garam masala uno di curcuma e sale q.b. Ho aggiunto un cucchiaio di succo di lime e ho fatto cuocere per circa un quarto d’ora. Ho aggiunto i noodles e fatto cuocere secondo le istruzioni sulla confezione. Prima di servire ho aggiunto del coriandolo fresco tritato.

it’s still so cold here in norther Italy, I couldn’t help cooking a warm, hearty soup and I came up with this curry. This is how I make it. Sauté 1/2 minced garlic clove and a bit of minced ginger (small as a 1/2 garlic clove) with a little olive or coconut oil. Add 1/2 spring onion finely sliced, 1 carrot sliced into thin strips, chopped bell peppers 1/4 cup and cook until the veggies are tender. Add a handful chopped (cooked) green beans. Add 125 ml coconut milk (1/2 cup) veggie broth and 3 tsp red curry paste, 1 pinch of turmeric, 1 pinch of curry, 1 pinch garam masala and salt to taste. Add 1 tbs lime and simmer for about 15 minutes.
Add the Miller&rice noodles @kingsobanoodleculture and allow them to cook according to package directions. Sprinkle with fresh cilantro and serve. •

I was positively surprised by most of the new products but let’s be honest: These Italian swirls aren’t my thing at all ♀️ they have a weird texture and a weird taste to them, just like it’s too much taste of that makes sense?
They were a Childhood favourite of mine so I was so excited to try them, maybe my expectations have just been too high for these ♀️
Anyways, this plate is an example for what I would have for a BBQ in the park or something some sort of mock meat, garlic baguette (that’s a MUST ) and lots of salad

Sweet potatoes loaded with yummy baked beans and easy guacamole
Recipe: (Bake 2 sweet potatoes in oven.) Cook 1 diced onion and 3 minced garlic cloves in a little vegetable broth (or in bean cooking liquid or olive oil) until onion softened, about 7 minutes. Add 1 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/4 tsp cayenne. Cook one more minute while stirring. Mix in 1 tbsp apple cider vinegar, 1 tbsp tamari or soy sauce, 1-15oz can diced tomatoes, 2 tbsp tomato paste and 1 to 2 tbsp maple syrup (to taste). Add 2 cups cooked (or 1-15oz canned) beans, rinsed and drained. (Kidney beans, small red beans or cranberry beans work best.) Bring to a boil before reducing heat to simmer about 20 minutes until sauce has thickened. Salt to taste. Recipe: Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Load baked sweet potatoes with beans and top with guacamole. Enjoy!
