Happy Thursday Lovelies! I made a spicy soy mince & mixed pepper stir fry with cous cous and baked plantains for lunch today. The plantains were too overripe for me (I don’t like sweet plantains), so I didn’t enjoy that part of this plate, otherwise, this was very filling and yum!

Ingredients
* 1.5 lb Broccoli (16-18 pieces)
* 1 Cup Chickpea Flour
* 1/4 Cup Rice flour
* 1 Tbsp Oil of you choice I used Extra virgin olive oil
* 1/4 Tsp Turmeric Powder
* 1/4 Tsp Red Chili Powder
* 1/4 Tsp Cumin Powder
* 3/4 Cup Water
Instructions
1. Cut broccoli in medium pieces, Keep it aside & let’s prepare the batter.
2. Mix everything with water & make sure there is no lumps. To avoid lumps use a strainer for dry ingredients & add water little by little & mix it. This batter will be thick enough to stick . Add a tbsp oil into the batter.
3. Now on a saucepan add enough oil to deep fry. Start frying when the oil is warm & fry it on medium heat.

Quindi mi limito a mostrarvela e a farvi vedere la morbidezza unica ➡️SCORRETE PER LA MORBIDEZZA
Una nuvola di bontà che si scioglie letteralmente in bocca
E i pezzettini di noci dentro danno quel tocco croccante che ci sta proprio bene
INGREDIENTI
320 g farina 00
16 g lievito
180 g zucchero
370 g acqua
120 g olio di semi
200 g pere
40 g noci
Procedimento
Accendere il forno statico a 180 gradi (visto che la preparazione richiede a dir tanto 10 minuti)
In una ciotola setacciare farina e lievito, mischiare e aggiungere zucchero, acqua e olio e mischiare con una frusta a mano
L’impasto che verrà fuori sarà abbastanza liquido.
Aggiungere le pere a pezzetti e le noci sbriciolate, tenendone un po’ da mettere sopra
Mettere il composto ottenuto in uno stampo rivestito da carta forno, aggiungere la pera rimanente a fettine sottili (così che non sprofondi) e i pezzetti di noci rimasti
Infornare per 40 minuti circa
Fate sempre la prova dello stecchino che dovrà uscire asciutto

It’s the weekend! This dessert is a treat but it’s full of antioxidants and fibre so it’s good for you too.
It’s so quick and easy to make so give it a try!
Recipe
3 tablespoons chai seeds
1 tablespoon matcha green tea powder
1 1/3 cups almond milk
2 teaspoon maple syrup
Instructions
Put all the ingredients in a glass jar
Add lid and shake well, then store in the fridge overnight
Stir after the first hour, then again before serving
Garnish with cacao nibs or fresh fruit
Enjoy!

Who would like a slice of cheesecake? I adapted this recipe from one my mum used to make for us as children. It was also a favourite at dinner parties and Christmas. I absolutely loved it! Bonus is that it is super easy to make. I strained a tub of @coyo_uk yoghurt to make the cream cheese. Just pour the yoghurt into a muslin cloth and hang over a bowl to catch the drips, for about 2 hours.
For the base I used vegan digestives but if you want to make more work for yourself then make a shortcrust pastry base. But I think sometimes we are allowed a super easy biscuit base!
Here is the full recipe:
Line the base of a 25cm tart dish.
190g digestive biscuits
90g vegan butter, melted
280g cream cheese - I used 1 large tub strained
175ml vegan cream - I used @alpro single cream
320g sweetened condensed coconut milk - I used @naturescharm
2 lemons, juice and zest
Crush the biscuits until very fine either in a food processor or with a rolling pin. Stir in the melted butter and then press firmly into the base of the tart dish. You can use the bottom of a glass to help with this.
Mix together the cream cheese, cream, condensed milk, lemon zest and juice until smooth. Pour over the base and smooth the top.
Freeze until needed. Remove from the freezer 20 mins before eating. It is at its best when the edges are beginning to melt. Enjoy!
