Khichdi So the last few days have been much like this khichdi, unglamorous but very fulfilling. And since this has been my lunch for three days straight (different versions of it) I thought why not share a recipe of this with you guys. Ingredients: 50gm moong dal (yellow moong dal, I use a katori and double the rice) 100gms rice (any local variety, try avoiding basmati) Salt 1/2tsp turmeric powder For the tadka: 2tbsp Ghee 1tsp black mustard seeds 7-8 garlic pods 15-20 Curry leaves 1 green chilli finely chopped (if required) 1 Springonion chopped (when in season) Method: 1. Wash the dal and the rice. 2. In a pressure cooker, add the dal, rice, salt and turmeric powder. 3. Give it three whistles (it's not that difficult) and switch off the gas. leave to let the steam out. 4. In a tadka pan, add the ghee and the mustard seeds. Let them sputter. Add the Curry leaves, garlic and green chilli. Let them saute well till the garlic is golden brown. 5. Add to the khichdi (stand back while doing this) and mix well. Check for salt. At this stage of need be add more water to make the khichdi a little runnier and not too clumpy (even though some people at home like the texture otherwise) 6. Serve hot with seasonal veggies. I've topped mine with spring onion and got some red carrots on the side. You'd love this with papad and achar (I skipped on those two yaars - friends of the khichdi - papad and achar but had it with yogurt) Tip: never panic with the consistency of khichdi it's always alright. You can do any tadka you like, my mum just does jeera (cumin) and ghee and nothing else. I like making mine with some grated red carrots too to make it more nutritious. Morning glory / Water Spinach / Kalmi Saag is a water green leafy vegetable extremely common in the South East Asian part of the world. It's full of vitamins, minerals, calcium and iron! It's extremely light to digest and easy to cook. As we celebrate this green leafy vegetable from @krishicress because I was missing it from all my travels to Hongkong and Thailand it's just a reminder that #biodiversity in the kitchen is important, and it's important to #trysomethingnew Here is my five minute stir fry recipe: 250gms morning glory 4 pods of garlic 1 green chilli 1 tbsp butter 1 tsp oil 1tsp soy sauce 1tsp vinegar 1tsp chilli sauce or chilli vinegar Method: 1. Wash the morning glory twice or thrice, remove any black stems and soak in salt water for a few minutes. 2. In a pan, add the butter and oil, heat well. Add fine chopped garlic and chilli. Saute till brown. 3. Add the morning glory and put a lid for two mins. 4. Add the sauces and mix, another two minutes of cooking and it's ready! 5. Remove in a bowl, if you like top it with peanuts or serve with steamed rice or Noddles or otherwise it's a great, very light side dish which can be eaten with any Asian meals. Ever since I've been living on my own, from time to time I've been craving mum's cooking. This 'Parsi Chicken Kebab' recipe is literally a one bowl, mix everything 20 min recipe. It's important to have all the ingredients with you so that you don't waste time looking for them mid way. Ingredients: Chicken keema - 500gms Onion - 1no Green chillies - 2 no(however spicy you'd like it) Coriander - 1/4bunch (or more) Boiled potatoes - 2no medium Turmeric powder - 1/2tsp Red chilli powder - 1/2tsp Parsi Sambhar Masala - 1tsp (you can make it at home by mixing red chillies and garlic or buy it) Parsi Dhana jeeru masala or garam masala - 1tsp Ginger garlic paste - 1tbsp @bira91beer Hot sauce - 2tbsp (or however spicy you'd like it) Bread slice - 1no Egg - 1 no Salt and pepper Semolina (sooji) - 200gms (for coating) Oil for fying Dipping sauce - Mayonnaise - 100gms Salt and pepper to taste Lemon - 1no @bira91beer hot sauce - 1 tbsp Celery/Coriander/herbs - 1 tbsp Method: 1. Wash and strain the chicken keema. Fine chop the onion, green chillies and coriander. Grate the boiled potato. Put everything in a bowl. 2. Add all the masalas, take the bread slice, dip it in a bowl of water, squeeze out and grate that too. 3. Add salt, pepper, hot sauce and an egg. Mix well till it's a homogeneous mixture. 4. Shape the keema into balls (depending on if you want them as a starter or mains. I made mine about 30gms each) and roll in semolina. Tip: I make one first, fry it, taste it and see if I want to add anything more 5. Deep fry (like mom does) or shallow fry or even air fry but I've always had them like this. 6. While they fry, In a bowl mix all the ingredients for the dipping sauce. That's ready too! 7. Serve hot! Gyaan: These can be made with mutton too! And are delish, but they work really well as snacks when people come over. Originally they are served along with Dhansak on a Sunday afternoon with a beer and a soon to be followed seista. #Bliss P.S. Avo Toast Indian Avocados or MakhanPhal (Butter Fruit in Hindi) are growing in regions in the southern part of India but these ones I got are from Bhimtal, Uttrakhand from @arush_bhandari Dadas home. On toast with a poached egg, a drizzle of olive oil and some herbs it's a beautiful dish! Its easy peasy and here goes the first recipe of 2019 #YesithadtohaveEgg Ingredients for the guac: Avocados - 4 Onions 2 fine chopped Green chillies 4 fine chopped Coriander 2tbsp Lemon juice of 2 lemons Sea salt Black pepper Extra virgin Olive oil 2tbsp Method: 1. Scoop out the pulp and put it in a bowl. Slightly mash with a fork. 2. Add all the chopped vegetables and a good drizzle of olive oil 3. Season with salt and pepper For the poached eggs: I have a reallllllly easy full proof method: 1. In a deep pot add water and bring to a simmer. Let it not be a rolling boil. 2. In a small steel bowl (katori) put two drops of oil and grease it. Break the egg in the bowl and dip it into the boiling water. 3. Cover and boil for 3-4mins (use a timer) and you'll see the white is perfectly set leaving the yolk a little runny. 4. Toast your bread, spread the avocado mixture, place the poached egg, a sprinkle of sea salt and and some ground pepper. 5. Top with whatever you like. I had some leftover basil and spring onion. 6. Garnish with any seeds, I've used sunflower, pumpkin and flaxseed And you've got yourself a little breakfast/lunch or dinner ❤️ * You can use the guac separately with chips or nachos and the poached eggs technique in your other recipes!
