When you are tired and working late in the cheese room and listening to an interview with the amazing @annelamott about HOPE on the @supersoul podcast and then you look up and see this outside. I have been reflecting on what is important to me. My hope fluctuates. In this big complicated mess of a food system, where do we fit in? In the grief and horror of daily news cycles is there any space for joy? My girls and their endless laughter give me hope. The farmers (new and old) in this valley and their dedication to keeping agriculture viable gives me hope. And this rainbow is such a perfect example of the daily beauty around us. The beauty that some days I am too busy to notice.... We are striving to be as regenerative and reciprocal as we can on this land. The sheep give so much of themselves from milk to wool to manure. Look, it’s not lost on me that we are absurdly, outrageously, disproportionately lucky. I know I post here about the troubles with the weather and the animals and that’s all A Thing we deal with. And it’s not a small thing. This work is really damn hard. But it’s work that let’s me spend my days wandering this land with ridiculous animals so they can live and eat in a way that supports and sustains their biological needs. I could do it a lot cheaper on less land with relatively terrifying food their bodies aren’t designed to digest. I could do that. But the result would be different. It wouldn’t be as glorious as this. We started making Besos skyr last summer after I dreamed for a few years of creating something with all the benefits of yogurt but went a few steps further in terms of density and decadence. I think we nailed it. But only because of the milk. And the milk is only because of the way these girls are allowed to live and eat. And that requires a unique sort of herding. I’ve been canning and curing for years but cheesemaking as an art of preservation has been a new practice the last year. I was intimidated by curds and whey for some reason which is just dumb- I have all of this beautiful grass fed milk, a nutritional powerhouse and yet I was still purchasing hard cheeses! ‍♀️ I’m pumping out wheels every other week right now and alternating an alpine tomme which you see here and a farmstead cheddar. One wheel for Bubba and I, one wheel for the kids. Once I get my technique down I’ll be bold enough to share the how.
