With the series finale a day away, we will finally have closure in a huge piece of pop culture. Game of thrones has influenced so much and has really brought to light all of us closet nerds. In tribute to this, here is my adaptation of Sansa’s lemon cakes. . Lemon Cakes 1 cup all purpose flour 1 teaspoon baking powder 1 pinch salt 1 pinch baking soda 1/4 cup buttermilk 1 tablespoon lemon zest 2 teaspoons vanilla bean paste 1/4 cup lemon juice 1/4 cup butter, softened 1 cup sugar 2 eggs 6 lemon wheels sliced 1/8” (see below) . Preheat oven to 350 degrees F and generously butter your baking tray. Mix the flour, baking powder, salt, and baking soda until there are no clumps. In a separate bowl, whisk together your buttermilk, lemon zest, vanilla bean paste, lemon juice, and buttermilk. Reserve separately. These are your wet and dry ingredients. . Next, combine the butter and sugar in a bowl and mix, preferably with a stand or hand mixer, until the mixture becomes white and fluffy. Next, add the eggs and whip until the mix has doubled in size. Remember to continually scrape down the sides to fully mix everything. The mixture should be light, airy, and pale yellow. . Next add your 1/3 of your dry ingredients and 1/3 of your wet ingredients. Repeat this two more times. Scrape into your baking tray and smooth the top. You want to bake this until it is golden. Poke with a skewer until it comes out dry. Cool for an hour. Flip your cake upside down and gently remove from the pan. . For the garnish: Place your 6 lemon slices in a pan and add 1 tablespoon of sugar and 1 cup of water. Bring to a boil, strain, and refill with new sugar and water. Repeat 2 more times. They should be translucent. Combine 1/2 cup of sugar, 1/4 cup lemon juice, and 1 tablespoon water with the blanched lemons. Boil this until it becomes a syrup. Use this to dress the cake. I added some local nasturtium leaves and flowers to steep in the syrup as well. . I hope you all get to make this recipe for your GoT dinner party! I’d love to see everyone’s work!
