I'M ON A ROLL: This had to be my favorite mock lobster dish of the week. Lobster Mushrooms in a garbanzo teff roll made with sea moss and perrier with a chickpea hemp seed sea food mayo. Garnished with chives and Nettle leaf.
I basically will be running through an entire freestyle seafood menu this week. Then I can go back and redo these recipes and measure, record, document and all the boring sh#t that sucks the life out of my creativity. However, on a positive note I hope to play a role in redefining what we think of as sea food. @KellyKeelo had no words for a good 5 mins...neither of us could talk. A few grunts and a gesture to pass the napkins was about it.

Someone mentioned making a Lobster Bisque -- I thought it was a great challenge so I steamed some lobster mushrooms with @CrushFoster Caribbean Seasoning and added Wakame flakes (sea weed) to the water for a more ocean flavor. I cubed burro banana, butternut squash and cut some cherry tomato -- the burro and butternut will be boiled separately until almost done -- they will be added to the stock which is blended chickpeas with hemp seeds, wakame flakes and red pepper for the lobster bisque color. Stock is a concentrate so I'll add water to thin it slightly and let simmer a bit. Once satisfied with the stock and the cubes I can add the tomato bell pepper and scallions. I'll dice the big pieces and sautee the lobster mushrooms one last time to make sure they're really tender then add them to the bisque. Simmer or sit for 15 mins and it's done. Mind you, I haven't done this in the physical yet...but in my mind its complete and I've seen it and tasted it already.

After the Lobster Mushrooms are steamed I hit em with a quick sautee to finish em off with a little more @CrushFoster Caribbean Seasoning and then plate them to be cut for use. At this point you can do whatever you want. Lobster Roll, topping on pizza, lobster mac and cheeze, lobster over salad, etc.
