Cheesy’ pasta with white beans (cannellini) and greens : @cookingforpeanuts Recipe: Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount. Top with fresh thyme leaves and red chili flakes...yum!

I have extremely good news and bad news. The bad news first: the amazing @vo2vegancafe in Cambridge is closing at the end of April I love this all vegan cafe so much and it’s a huge loss for the Boston food scene. But the good news is that you have a few more weeks to go in and have their amazing, unique food! If you go in on a weekend, I highly recommend you have this special breakfast sandwich called “Some Like It Hot” Toasted English muffin with tofu, @lightlifefoods sausage (which by the way is SO GOOD), smoked vegan Gouda, spinach, tomato, and sriracha mayo. Definitely one of the best breakfast sandwiches I’ve had in a very long time. Cauliflower ‘Hot Wings’ with oil-free and gluten-free optionsAfter seeing the amazing cauliflower bites on my IG friend Woonie’s feed @woon.heng ,I was so inspired that I decided to try my hand at making some of my own with some of my pantry staples. You know I’m always up for a culinary experiment ‍!These were a huge hit with the whole family (and they can be pretty critical)!! Spicy, sweet and pretty healthy! What more can we ask of the humble cauliflower! Happy weekend friends. Recipe: Wash and cut 1 cauliflower head into bite-size florets. Prepare batter:mix dry ingredients 3/4 cup all-purpose flour (or rice flour for gluten-free), 2 tsp garlic powder, 1 tsp cumin, 1 tsp paprika, several turns black pepper, pinch of salt (to taste). Mix wet ingredients1/2 cup plant milk + 1/2 cup water. Pour wet ingredients into dry ingredients gradually while mixing to remove any lumps. Dip cauliflower florets into batter one at a time, shaking of any excess. Place on lined baking sheet. Roast at 400F for 20 minutes, flipping half way. While cauliflower is roasting, prepare sauce. Sauce: Whisk together 2 tbsp tamari, 2 tbsp sriracha, 1 tbsp apple cider vinegar, 2 tbsp water, 2 tbsp maple syrup and 2 tsp tapioca starch. (Optional: Heat 1 tbsp vegan butter in saucepan until melted. Remove saucepan from stove and whisk sauce into melted butter while saucepan is still hot. Keep whisking until sauce thickens.) For oil-free version, transfer mixed sauce directly to saucepan and whisk while heating until starts to thicken. Dip roasted cauliflower florets into sauce one at a time, using your hands to generously coat each floret. Roast on lined baking sheet at 400F about 30 minutes, flipping half way, until florets start to darken.
