So I went to the doctor ‍⚕️today to have a blood test done & without knowing anything about me or having test results, she told me eating meat is better for everyone! Ummm...what! Anyone else kind of appalled by some people‘s attitude (anger) towards vegans? (Oh and I had a vegan white chocolate blueberry mini-tart after my appointment .)

As I‘ve mentioned before, we‘ve made breakfast bread - which looks a whole lot like cake - a thing in our house. We don’t like cereal with warm coffee in the mornings & are tired of toast/actual bread. So obviously we had to come up with something . I‘m not saying you should have this for breakfast every day of the week. Going to call this thing WHITE SUMMER CAKE ‍♀️✨☀️, because VEGAN ALMOND LAYER CAKE W/ WHITE CURRANTS & AQUAFABA MERINGUE KISSES is just not catchy enough. Looking at my last posts & then this one, I realized that my berry obsession has really gotten out of hand. Would you lovely people prefer some chocolate recipes again? Or anything else? Anyway, back to the berry cake. For the cake layers, I used the VEGAN LEMON ALMOND CAKE (which is PERFECTION) by the very awesome @domestic_gothess . Only changes I made: swapped AP flour for spelt flour, skipped lemon zest & reduced almond extract to three drops & sugar to 110 g. Then I made a very simple VEGAN VANILLA BUTTERCREAM (this makes a huge amount; you should be sensible & half it). INGREDIENTS: 340 g vegan butter 330 g powdered sugar 1/2 tsp vanilla extract pinch of sea saltelse No instructions needed here, simply mix all ingredients in the food processor for a couple of minutes until perfectly fluffy. ASSEMBLY: - Cut cake into layers. - Top each layer with buttercream & a handful of berries. That’s it. Pretty straight-forward ☺️

Membuat lapgit ini adalah takut nya kue tidak mengembang.. mgkn kebisaan buat sponge cake/butter cake yg bersifat lebih ringan, jd bawaan nya pengen lapgit ini ringan... salaaahh besar ya moms... tipe lapis legit sendiri adalah padat/berat. Tapi bukan bantat/keras ya.. Lapgit tidak boleh berongga/ berangin.. jd adonan harus cukup stabil dan menyatu, tidak bole lumer/pecah. Mixing Adonan Kutel yg dan kocokan butter ini kuncinya. Consistency mrk berdua harus sama. Jd waktu pencampuran adonan tidak terpisah. Mrk bisa menyatu dan fluffy. . Nah kalo teman2 dah mengikuti step by step nya dengan benar.. dijamin deh.. hasil nya sangattt memuaskan. It is really worthy.. walau kita harus momong adonan ini terutama pas di oven agar tidak gosong dan lapisan bisa sama rata/tidak bopeng2... Sungguh kepuasan batin yg tak dpt di uraikan dengan kata2 .
