Pie crust shrinkage! The bane of every baker's existence. So... How do you stop your pie crust from shrinking? ⁣⁣ ⁣⁣ *TIP #1- DO NOT OVERWORK YOUR DOUGH⁣⁣ When you add liquid to flour and start working it together the protein strands begin coming together and aligning themselves to form gluten. ⁣⁣ The more you knead or fuss with your dough, the stronger these bonds become. For pie dough, you want to keep these bonds weak. Tight gluten strands are going to lead to a tough chewy crust that will shrink when baked.⁣⁣ ⁣⁣ *TIP #2: LET YOUR DOUGH REST⁣⁣ ⁣⁣ After you mix your dough, you should let it rest in the refrigerator for at least an hour. The main purpose of this is let your flour finish hydrating and to firm the fat back up, but it also relaxes the gluten strands. ⁣⁣ ⁣⁣ *TIP #3: DO NOT STRETCH YOUR DOUGH⁣⁣ ⁣⁣ Roll the dough to about 3″ wider than your pie plate. Then when you transfer it into the plate lift up all the sides and lit it gently fall in. Do not stretch the dough to get it to fit! Stretching the dough to make it fit in the plate is the biggest offender for causing a crust to shrink! ⁣⁣ ⁣⁣ *TIP #4: TRIM THE CRUST WIDER THAN THE PLATE⁣⁣ ⁣⁣ Ok, so here is the kicker. Your crust is still going to shrink a little bit. Even when you do everything correctly to prevent the crust from shrinking, it is going to shrink slightly. so do yourself a favor and make it as wide as the plate will allow. ⁣⁣ ⁣⁣ *TIP #5: LET IT REST AGAIN⁣⁣ ⁣⁣ Letting the gluten strands relax again after the dough is shaped will reduce the amount of shrinkage you get once the crust hits the oven. I like to pop the crust in the refrigerator while the oven preheats! ⁣⁣ ⁣⁣ *TIP #6: WEIGH DOWN THE CRUST⁣⁣ ⁣⁣ If you are baking the crust with a filling in it, then your filling is obviously your weight. But, if you are blind baking (aka, baking before the filling is added) then you need to weigh it down. Lay a piece of parchment paper in the crust and fill it with dried beans, rice, or pie weights.

Hi friends! Quite a few new people have popped in over here in the last few weeks so I wanted to take a moment to say hello!!! I'm so happy to have you here! ⁣ ⁣ A little bit about my background and what brought me here...⁣ ⁣ I’m Kristin “Baker Bettie” Hoffman, a trained chef and the baking instructor over at BakerBettie.com and on YouTube as well as in various workshops around Chicago! ⁣ ⁣ A little about how I got here... I started baking in 2010 as I was finishing up my college degree in Music Therapy. Never being satisfied with any chocolate chip cookie, I became obsessed with creating my own perfect cookie. After lots of tweaks and trial and error, I developed my very first recipe.⁣ ⁣ This process of developing a recipe sparked a new obsession in me. I couldn’t get enough of baking and I craved to understand the science and techniques. I started an online cookie business and then decided that production wasn't for me, so I then started BakerBettie.com as a hobby blog to document what I was learning. At the same time, I was also trying to find my footing as a music therapist and worked for several years in various mental health settings. But in 2013, I decided to change careers for good and enrolled in culinary school.⁣ ⁣ Culinary school was everything I craved. The approach to teaching complete concepts instead of just recipes fed my appetite to truly understand baking techniques and baking science. And this is the approach I take with my blog, baking videos, and workshops. ⁣ ⁣ In 2015 I took a position a private chef for someone with some pretty extreme food allergies several years. And then I decided to leave my full time job in January of 2018 to pursue Baker Bettie full time. I have such a desire to teach baking to others, and while this website has been around since 2011, I wanted to give it my full attention.⁣ ⁣ Currently, I am working to add more live workshops into my business around Chicago. I love connecting with you all online, but I love baking with you in person even more! I am working my dream job, and I am endlessly thankful to everyone who has supported and believed in me during this journey. ❤️

Miiiiiix time! Y’all hear me talk about overnight cold premixing a lot (especially with high% whole grain doughs) and have questions about how to mix levain into an already developed (and usually very cold) dough- this is how I do it. I’m pretty sure I saw this a long time ago on @trevorjaywilson ‘s site... this is my “I have small hands” version of it. If you aren’t warming your dough before mixing, you’ll almost always have to do this a little at a time, allowing the dough to rest several times so it doesn’t tear; if you warm the dough first and it’s not a stiff dough, you’ll be able to do this in 2-3 sessions. #sourdoughbread #naturallyleavened #bakingschool #bakersofinstagram #naturallyleavened #ilovebread #levain #instabread #artisanbread
