A couple boneless beef chuck ribs, seasoned with the trio from @hardcorecarnivore ,hit the sous vide bath at 129 degrees for 36 hours and then finally finished caveman style on the @biggreenegg mini max. . . The final product was sliced and topped with @jacobsensaltco flake sea salt. And let me tell you, it was delicious! Super tender, great beefy flavor with the texture of a good steak! Will definitely do this again. . The @anovaculinary sous vide and @cambromfg square container were made for each other! Can’t wait to experiment with this method of cooking more! . . If it quacks like a duck and looks like a duck it must be a duck . @laperbebas @belomdiet @terlalulaper . This was a first for me, cooking a whole duck on the grill. After reading on how best to make them, I decided to go the spatchcock route. . After it was spatchcocked, easy work for my @messermeister poultry shears, I put the duck in a @cambromfg colander pan and into a regular pan so the skin could start to dry out overnight in the refrigerator. Next day I poked some holes in the skin and seasoned it. The holes were there to help render down the fat. . The duck was cooked on the @biggreenegg over @fogocharcoal , indirect at 350 degrees. I flipped it a few times during the cook and pulled it when the thigh was at 160 internal. Rested for 10 minutes and served with roasted potatoes and pickled peppers. . Overall, the duck was delicious. Very juicy and tender. The skin was nice and crispy on the legs but not so much on the breast. I might try roasting it whole next time and start at a lower temp. Need to work on rendering all that breast meat fat and getting the skin more crispy. Will definitely try this again. . . Vicariously-adverb-in a way that is experienced in the imagination through the actions of another person. . I’m still not supposed to be eating beef or fatty foods so I am living vicariously through all of you and through my own past cooks! . This was my first jump into Sous Vide steak. It is a Prime ribeye that was bathed for 2 hours at 125° using my new @anovaculinary with fresh rosemary and sliced shallots. after that, it was seasoned with @wassismeatmarket Classic Steak Rub. I then reverse seared it on my @biggreenegg #MiniMax over @fogocharcoal . The knife I used to slice it is the same @richaxe07 knife that I just had in my giveaway. . We were all really happy with the results. It’s very RARE when we aren’t. Hah, I’m such a CUT up! Make no misSTEAK, it was delicious, no matter how you SLICE it! You have to be SHARP to get this humor!‍♂️‍♂️‍♂️ . My slicing skills were a bit rough that evening but Sous Vide and searing were both on point! . These Big Green Egg ribs were rubbed with @wassismeatmarket rub and cooked over my favorite, FOGO charcoal until they passed “the bend test”. (When you pick them up with tongs and they bend and the skin just starts to crack). They weren’t quite fall off the bone and they still had a slight bite to them. Perfect for me. .
